Development And Design Of Vehicle Fuel Toaster Oven

Vehicle fuel toaster oven is a kind of Western-style food cooking equipment,and mainly used for bread baking.In this paper,a fuel toaster oven as an example of development and design on a Western cooking trailer.The goal is to develop an oven that fitting vehicle,and provides bread quickly and easily in the field.Provide reliable food and drink protection for wartime and major natural disasters.In this paper,on the basis of full understanding of the processing technology of bread,and the merits and demerits of various types of ovens,convection ovens are selected as the basic form of vehicle fuel bread ovens.Starting with the heat demand of baking bread,the main heat transfer mode of oven during baking bread is analyzed,and the inner cavity and the size of the oven are determined by convenction and radiation heat transfer of the oven;the thickness of the heat preservation layer of the oven is determined by the calculation of the heat dissipation of the oven surface.In the calculation of heat exchange between hot air and flue gas,a tube heat exchanger with low manufacturing coat,good adaptability and small heat exchange power is selected as the hot air heat exchanger.Through the calculation of the heat power of the burner,the fuel burner with adjustable firepower is selected.The developed vehicle fuel bread oven consists of an oven body,a hot air heat exchanger,a burner etc.the main material is SUS304 stainless steel,which has high temperature resistance and corrosion resistance and meets the hygienic requirements.Finally,the processing performance was verified by baking bread and other experiments.
