Abstract/Summary:
With the development and progress of the Times, the core of food safety issues is no longer just to meet people’s food and clothing. In the current stage, food safety issues are more focused on making people eat well, eat healthily and eat safely. However, food safety incidents are common among consumers.Corona Virus Disease(COVID-19)detected in the Huanan seafood market of Wuhan cannot be directly attributed to the food safety field, but its exposed short board problem was obvious. It is surprising that the places where food is bought are dirty, the food hygiene is not up to standard, and the consumer’s food safety behavior and operation errors frequently occur.National public health and market regulatory authorities are unable to carry out effective supervision in all aspects. Therefore, consumers themselves should be vigilant and enhance food safety sensitivity. The survey can be found that the phenomenon of the gap between knowledge and behavior existed in the consumer food safety self-protection behavior,it also widely existed in the stage of consumer food safety purchase and handling, the gap between knowledge and behavior of consumer food safety self-protection seriously affects the health of consumers. This study took consumers’ food safety knowledge and behavior as the research object to explore this issue。This study is divided into six partsThe first part is the introduction, which mainly introduces the research background, purpose and significance of this study. It reveals the research status at home and abroad through the literature review of consumer food safety self-protection behavior, which plays a reference significance for the research of study. The research route shows the research logic and train of thoughtThe second part is related to the definition of concepts and theoretical basis, mainly on the concept of food safety,self-protection,the gap between knowledge and behavior to make a clear statement, finally determine the main research object of the gap between knowledge and behavior in consumer food safety self-protect on behavior definition. The theoretical foundation of study provides theoretical support for the researchThe third part is the analysis of consumers’ self-protection of food safety situation It mainly introduces the basic information of consumers’ food safety knowledge and behavior. The non-parametric test method proves that in addition to gender and per capita annual income of families, there are significant differences in knowledge between residence and education level(P<0.05).Age and marital status had significant differences on behavior(P<0.05).Through descriptive analysis,it is found that the gap between knowledge and behavior exists in the stages of food safety purchase and handlingThe fourth part is the identification of high-risk link and high-risk group. The study found that the high-risk links were the labeled product purchase link(95.7%),the purchase place link(87.6%),the purchase order and frequency link(86.4%),the kitchenware use link(80.0%),and the personal hygiene link(79.8%).The results of Logistic regression showed that the characteristics of high-risk people were different with different knowledge and behaviors in different linksThe fifth part is the cause analysis of the gap between knowledge and behavior exists in the consumer food safety self-protection behavior, which mainly explores the causes of the gap in different links, including subjective factors(personal preference, responsibility awareness, behavior control)and objective factors(income, knowledge level, degree of involvement)The sixth part is the research conclusion and prospect.Combining with the data analysis results of this paper, this paper summarizes the full text and puts forward effective policy Suggestions.
