Broccoli is a vegetable riching in nutrition value with high market value.Its domestic demand and foreign exports have increased dramatically in recent years.According to the statistics of the Food and Agriculture Organization of the United Nations,China produced 9.3 million tons of broccoli(including cauliflower)in 2014,which accounted for 38% of the whole world.China produces a great deal of broccoli with high quality,and it can improve nationals' health and promote economic benefits.However,larger number of defective heads,stalks and leaves have been abandoned,causing environmental pollution and waste.We make them into powder by juicing,filtering and spray drying.The purpose of this study is to provide an effective way for the comprehensive utilization of broccoli resources.We investigate the vivo antioxidant activity and the effect of regulating intestinal microflora,using whole broccoli juice powder as raw material.1.The results of nutrient analysis showed that: The content of crude protein is the highest in the whole juice powder of broccoli,which is 47.85±0.50%.The essential amino acids in the sample are plentiful and complete,its EAAI index is 105.31 and its amino acid has high score.The total sugar content is 21.63±1.20%.By the separation and purification of sugars,it can collecte about 90 monosaccharide molecules of glucan.K,Ca and Fe are abundant in the sample and can be used as mineral supplements in diets.The ratio of K to Na is high,the ratio of Zn to Cu is low,and the elemental composition reasonable.Some micronutrients can be detected.The content of total flavonoids was 7.85±0.04 mg/g,and sulforaphane was 24.44±0.76 ?g/g.2.Antioxidant experiments results on mice showed that: Whole broccoli juice powder have no significant effect on the weight gain of the SPF grade KM male mice.Compared with the model control group,the effects of different doses groups on the detection indicators were different.Among them,the antioxidant effects of the middle and high dose groups were particularly obvious.The treatment increased GSH content highly significant(P<0.01),the boosting effect of medium and high dose groups was 346.88% and 437.50%.The treatment increased SOD enzyme activity highly significant(P<0.01),the boosting effect of medium and high dose groups was 17.30% and 22.46%.The treatment decreased MDA content highly significant(P<0.01),the reducing effect of medium and high dose groups was 46.49% and 52.21%.The treatment decreased protein carbonyl content highly significant(P<0.01),the reducing effect of medium and high dose groups was 18.52% and 27.79%.3.The experimental results of regulating intestinal flora on mice showed that: The gavage of whole broccoli juice powder can dramatically increase the intestinal microbial population diversity and community richness on mice,and the effects of different experimental doses are different.Compared with the blank control group,at the genus level,some microbial richness drops significantly with the increasing of the gavage doses,such as Helicobacter.Some microbial richness increases significantly with the increasing of the gavage doses,such as [Eubacterium]_coprostanoligenes_group.Among these,the abundance of some beneficial bacteria increased,and the abundance of some harmful bacteria decreased.
