According to the technology requirements,automatic production line of tea is confixed by connecting equipment to connect the process equipment,use the SCM PLC,sensing system and other microcomputer equipment to automatic control the production of tea,achieve the processing cycle is continuity and never fall to the ground.Compared with the traditional single machine production,the automatic production line of famous tea can greatly reduce labor intensity,save production costs,improve production efficiency,ensure cleanliness and stability of tea making process,and achieve continuous and intelligent tea processing.The modernization of tea processing technology requires that tea should be continuous,clean,automated and standardized during the processing,the application of tea automatic production line is an inevitable trend.However,the automation production line of tea is facing an urgent and realistic problem:First,the processing machinery and equipment are late,the development time is not long,the research foundation is relatively weak.Two,the cost is high,and the application range of the continuous production line of tea is small.Three,the technology parameters of automatic production line mostly still operate as the stand-alone work.The hardware and software are not well matched,The processing parameters and control system of automatic production line for famous tea are not formulated.Therefore,the selection of tea processing parameters,quality control of tea production is of great theoretical and practical value.This paper uses the principle and method of tea processing,tea biochemistry and related disciplines,taking 7 automatic production lines of tea as the research object,using the comprehensive evaluation method to score the production thread control,automation,serialization and cleanliness;explored the processing technic and processing features of tea automatic production,systematically analyzed the quality of the formation process,carry out quality evaluation and other research work.On this basis,the online quality control method of the famous tea automation production line and the whole process traceability system of the enterprise are put forward,It provides technical theory for the application ofautomatic production line of famous tea and the popularization of automatic processing technology.The main research results are as follows:(1)Systematically investigate the mechanical composition of 7 automated production lines,The results show that due to the difference of tea production,research level and mechanical cost,the level of continuous production,programmed control and automatic production of different automatic production lines is quite different,the continuity,automation and cleanliness of the automatic production line of fragrant green tea are the highest in the seven production lines.It is 18.74±2.15?92.69±4.25?94.25±2.27,and the highest score of the program control score and the layout level is the continuous processing line of Sichuan Red tea,which is 56.00±3.01?94.21±2.95;At present,tea automation production line is mainly green tea;The continuity of the seven production lines is relatively high,with an average score of 81.07;The seven production lines are built according to the production organization form of "object specialization",which is constrained by the automated production line built on the plant area,and the layout level is poor,the score was only 55.06±3.61;The automatic production line's cleanliness score is relatively high,with an average score of 84.89,but there are still problems in workshop cleaning management.(2)The processing technology and the characteristics of the seven famous tea automatic production line,the results show that the processing technology of the automatic production line is more continuous;the process flow is more reasonable,effectively overcoming the repeated defects of the traditional "baking" or "fried" process,and coordinating the reasonable degree of the processing and quality of the tea;the automatic production can save the production efficiency and shorten the operation time;the process of automatic production line is processed.The water content of WIP is gradually decreasing,and the moisture content of tea leaves is even lost in various processes,which is conducive to the appearance and color formation of dry tea.(3)On the basis of the selection of the same process and raw materials,the technical and economic performance of the automatic production and the traditional production iscompared.The results showed that automatic production can effectively improve the material production rate(98.03%,compared with traditional production by 18.97%)and the production line balance rate(27.38%,up to 63.37%),save production costs(compared with the traditional reduction of 5.14 yuan /kg),reduce waiting time(traditional production waiting time for the total use of 19.51±2.42 min,is automatic production 7.71 times);although the energy cost of automatic production is higher(compared with traditional 1.61 yuan /kg,3.73 yuan /kg),it can improve the cleaning degree of processing process,save manpower cost(saving labor cost 6.75 yuan /kg),and reduce the total production cost of automatic production.(4)Systematically studied the changes of the main quality components in the processing process of the famous tea automatic production line,The results showed that with the processing procedure,the score of sensory quality increased,and the shape and endoplasmic quality gradually formed.Taking 5 finished automatic products as an example,detected the free amino acid components,the results showed that 21 kinds of free amino acids were detected in the samples automatically,and the total amino acids were distributed between 16.33-35.67%;Catechin components detection showed that automation prepared catechin components were mainly ester catechin(EGCG,GCG,ECG and CG),which is astringent;The analogue sensory analysis of electronic nose(tongue)showed that the aroma and flavor characteristics of black tea in summer were more complex than that in spring,and there is a significant difference in aroma and taste between black tea produced by chuanchaqunti varieties and Zaobaijian varieties.The results of GC-MS aroma detection showed that 56 kinds of aroma compounds were detected in 5 automated production black tea samples.The variety and content of aroma components were different,which showed that the difference of fresh leaf raw materials in automatic processing had a significant influence on the formation of black tea aroma.(5)Used the same raw materials and different processing methods to produce Mengding Ganlu,sensory evaluation results show that the quality of tea traditional processing is more reflect the feature of the Mengding ganlu(the average score oftraditional processing is 90.83±2.49,the average score of automatic production is87.98±1.01),but the processing stability is worse than that of automation(the difference of traditional processing standard is 3.03,the standard deviation of automatic production is 1).The chemical composition determination shows that the difference of caffeine and tea polyphenols is not significant under different processing methods,free amino acids are not significant.The content of catechin,water extract and chlorophyll was significantly different.Automatic processing could significantly increase the content of chlorophyll(the chlorophyll retention of automatic production was 1.15 times that of traditional production),and the content of free amino acids was retained and the ratio of phenol to ammonia was reduced(automatic production is 5.20,traditional processing is 5.62).(6)put forward the on-line quality control method of automatic tea production line,which can control the online links simply,quickly and effectively,so as to achieve the management guidance process of tea quality stability.(7)put forward a kind of quality tracing system used in the enterprise,which provides a simple and convenient tracing method for quality control of tea.
