The study of dietological anthropology is an important field in anthropological research.Most of the existing studies of dietological anthropology are cultural interpretations based on single food,and the comparative study of different dietary cultures and dietary behaviors in the same discourse is less.In today's economic and cultural globalization,food culture and dietary behaviors are constantly changing in the process of continuous food flow.This article is in this context,taking Xiamen as a case,taking the two representative drinks of tea and coffee as the research object,the comparative analysis and study of the culture of dietological anthropology.On the basis of an in-depth field survey,this paper expounds the cultural matters related to tea and coffee,including the making tools,techniques,characteristics and cognition of tea and coffee,the cultural construction and cultural communication in the market and capital operation,and the cultural concept,cultural behavior and cultural changes of tea and coffee.Analysis reveals the relationship between traditional culture and modern culture.Tradition and modernity are not opposite poles,but relative concepts.There is no only way of modernization,but a process of diversity based on different cultural traditions.Different cultures between tradition and modernity are interrelated.Traditional continuity,development and innovation must be carried out on the basis of a correct understanding of the relationship between tradition and modernity.The differences and coexistence of different dietary cultures reflect the diversity of social culture and the inherent competitive relationship.The vicissitude and reconstruction of diet culture reflect the change of people's thinking mode and life style.In the tea culture,the traditional thinking cognition of the East has been more complete and vivid,but in the current political,economic and cultural globalization,the rapid economic development and the dominant social environment,the traditional cognitive mode of thinking,on the one hand,is derived from the cognitive mode and Modernity of the western culture thinking.Shock,on the one hand,is experiencing cultural adherence and dilemma under the traditional cognitive mode of thinking.In the process of modernization,tea and coffee have derived fast-food products that are compatible with fast-paced life,and the traditional catering culture is being deconstructed and reconstructed.Under the dual role of cultural globalization and market capitalization,there are many changes in diet,such as the decline in the quality of food,the quickening of the rhythm of the diet,the diversification of the type of diet,and the social and economic pressures on the individual in the market and capital context,resulting in the corresponding ways of livelihood and the way of life.At the same time,this change is affecting human cultural interaction,cultural blending and cultural change.
