| This study analyzed the market quality and safety of infant formula in China and comparative analysis of the total nutrients required by the national standards for the marketing of five mainstream domestic and foreign brands of infant formula powder.The difference between domestic and foreign brand powder in nutrient content and formula design is studied.To explore the similarities and differences in quality and formula design between domestic brand infant formula and foreign brand infant formula.The chemical composition and physical properties of infant formula powder are the direct factors affecting the flushing of infant formula powder.10 different infant formula powder samples as the object,the wetting subsidence and dispersibility were measured to evaluate the flushing of infant formula powder.The protein,fat,carbohydrate,sodium,calcium,phosphorus,moisture and impurity index in the chemical composition of infant formula powder and the particle size,particle density,angle of repose and viscosity index in the physical properties were selected as the influencing factors,and the relevance analysis was carried out by SPSS.The relationship between the tonality of infant formula powder and the protein composition of 10 infant formulas was analyzed by SDS polyacrylamide gel electrophoresis.The effects of protein composition and distribution of infant formula on the flushing of infant formula powder were studied in depth.It provides a theoretical basis for improving the confidence of Chinese consumers in domestic brand infant formula powder and for studying high quality infant formula powder with good flushing performance.The main results are as follows:(1)By comparing the five main brands of infant formula powder(two foreign brands and three domestic brands)on the market,the results showed that there was no significant difference in the contents of various nutrients between domestic infant formula powder and imported infant formula powder.The indexes of vitamin E,vitamin K,vitamin B1,vitamin B2,pantothenic acid and phosphorus of foreign brands of formula powder were higher than those of domestic brands according to the content of individual nutrients.While the sodium and water content of foreign brand formula is lower than domestic brand formula as a whole.It can be seen that the infant formula powder of foreign brands pays more attention to the addition and enhancement of vitamin content.Domestic infant formula powder is basically consistent with foreign brand infant formula powder in formula design concept.(2)By comparing the five brands older infant formula of the same series as infant formula,there was no significant difference in the contents of various nutrients between domestic and foreign brands of infant formula in the comparative study of larger infant formula as a whole.While the content of protein,vitamin D,vitamin B1 and chlorine is lower than the domestic brand formula.It can be seen that the design of protein and fat of macronutrients in older infant formula powder of foreign brands and infant formula powder of domestic brands have different emphasis.There is little difference in other nutrient indicators between domestic brands and foreign brands of infant formula powder.Pollutants,mycotoxins and microbial limit indicators all meet the requirements of corresponding national standards.Based on the above data analysis,we can draw a preliminary conclusion that the design concept of domestic infant formula powder is basically the same as that of foreign infant formula powder.(3)By selecting 10 different brands of infant formula powder samples,the wetting subsidence and dispersibility of each infant formula powder sample were determined to characterize the formulation,and its chemical composition such as protein,fat,carbohydrate,sodium,calcium,phosphorus,water,impurities;physical properties such as particle density,particle size;The key factors affecting the flushing of infant formula powder were studied by establishing relevance analysis method.The relevance analysis by SPSS showed that the particle size,fluidity and phosphorus content of 300-600 micron were significant positive correlation with the flushing of infant formula powder,and the relevance coefficients were 0.908,0.920 and 0.705,respectively.The particle size and fluidity of 300-600 micron were highly significant positive correlation,and the phosphorus content was positively correlated.The relevance coefficients were-0.685 and-0.922,respectively.Particle density was highly significant negative correlation,and the particle size was significant negative correlation between 0 and 100 micron.(4)SDS polyacrylamide gel electrophoresis showed that the protein composition of infant formula powder was basically the same in terms of subunit composition,mainly composed of 5subunits of 15kDa71kDa,and their molecular weights were 15kDa,20kDa,28kDa,33kDa and71kDa respectively.Among the 10 selected infant formula powder,there were significant differences in alpha-lactalbumin at 15kDa and casein subunits alpha s1 and alpha s2 at 28kDa. |
