antler.According to the content recorded in the "Shen Nong’s Materia Medica",the antler plate has a significant effect of warming the liver,benefiting the spleen and stomach,strengthening the waist and strengthening the yang,and promoting blood circulation.Due to the increase in people’s lives and work pressure,the influence of diet and the surrounding environment,women’s rate of breast hyperplasia increases year by year,making women’s chances of getting breast cancer rise.Sika deer antler hydrolyzed can be made into biologically active peptides.Studies have shown that it has the function of treating breast hyperplasia.If such a bioactive peptide can be developed into a health food for treating hyperplasia of mammary glands,it has a positive effect on improving the utilization value of antlers.In this experiment,the sika deer angle peptides were treated with ultrasonic sterilization,and three products were developed: sika deer horn chewing-pectin chewable tablets,sika deer horn retort peptide functional beverages and sika deer horn retort polypeptide effervescent tablets.The main conclusions are as follows:1.The sika deer angle peptide polypeptide hydrolysate was used as the raw material,ultrasonic sterilization method was used,and the Box-Benhnken center combination experiment design and response surface method were used on the basis of single factor experiment to determine the optimum ultrasonic sterilizing process for the sika antler angle peptides.Conditions: Ultrasonic time 22 min,ultrasonic power 120 w,ultrasonic pulse time44 s.Under this condition,the sterilization rate of the Sika deer angle peptide polypeptide hydrolysate was 89.02%,the hydroxyl radical clearance rate was 36.1%,and the peptide loss rate was 11.9%.The total number of colonies in the sterilized samples was 63 CFU/mL,and the coliform bacteria were not detected,which met the national standards(the total number of colonies was less than 100 CFU/mL,and the coliform group MPN was less than or equal to3).2.Using Sika deer keratin peptide powder as raw material,on the basis of single factor experiment,Box-Benhnken’s center combination experiment design and response surface method were used to determine the optimum technological conditions for sika deer horn chewing peptides chewable tablets: Powder 10%,mannitol and sorbitol(ratio 4:1),addition amount 38.67%,microcrystalline cellulose content 39.85%,Vc addition amount 3.97%,95%ethanol addition amount 5.28%,magnesium stearate addition amount 1%.The finishedproduct obtained by this formula has a complete shape,a smooth surface,uniform color,a sweet and sour taste,and moderate hardness.Under the conditions of light intensity(4500?500lx),certain temperature(10℃?2℃、25℃?2℃)and certain humidity(72.0%?5%、92.5%?5%),it was found that it was not affected by temperature,but the increase of light intensity would cause the decrease of antioxidant activity and the decrease of polypeptide content.It would be stored in a wet environment.As a result,it is suggested to store the products under the conditions of normal temperature,drying and avoiding light.Under this condition,the polypeptide chewable tablet of the deer’s antler disc can be stored for one year.3.The sika deer angle peptide polypeptide hydrolysate was used as the raw material.Based on the single factor experiment,Box-Benhnken’s center combination experiment design and response surface method were used to determine the optimal technological conditions for the sika deer horn pate polypeptide functional beverage: The amount was9.94%,the amount of citric acid was 0.39%,white granulated sugar and honey(ratio 1:3),the amount was 7.98%,pectin and sodium alginate(ratio 1:3),and the amount was 0.21%.The beverage produced by the formula is refreshing and refreshing,the hydroxyl radical scavenging rate is as high as 48.79%,and has good oxidation resistance.Shelf life test showed that Sika Deer polypeptide beverage can store(25℃?2℃)for six months at room temperature.4.Using sika deer’s keratin peptide powder as raw material,on the basis of single factor experiment,Box-Benhnken’s central combinatorial experimental design and response surface methodology were used to determine the optimum technological conditions for the sika deer angling peptide effervescent tablet: antler peptide 10% of powder,32.06% of dextrin,40.78%of citric acid and sodium carbonate,4.95% of 95% ethanol,and 1.49% of polyethylene glycol6000.The finished product obtained from this formula has complete shape,uniform color and delicate taste,with 6.61 mL foaming capacity,162 s disintegration time limit,and ±5%difference in tablet weight,which conforms to the requirements of the relevant standards of the Chinese Pharmacopoeia 2015 edition(foaming volume> 6mL).Solution time limit <5min,tablet weight difference ± 5%).The results of accelerated test and long term test show that the product should be kept in closed storage,stored at room temperature,relative humidity is less than 50%,avoiding humid,metamorphic and mildew,and the expected shelf life is about one year. |
