Infant rice flour products to adapt to this article in view of the present market is wide and lack of pertinence,and research on 6 to 12 months and 12 to 36 months piecewise formula,combined with the background particles is long,high rate of broken rice,taste good,developed to meet different stages of the infant’s physiological needs high quality rice.The main conclusions are as follows:1.Research on infant and young child nutrition rice formula: according to the different age stages of infant and young child nutrition physiological needs,design of infant and young child nutrition rice 2 formulas,through the sensory evaluation to select the "large stream sweet" infant and young child nutrition rice varieties is the most suitable raw materials,through the orthogonal experiment to get the following formula:Period of infant and young child nutrition rice: rice meal 46 g,a powder for 41 g,3.6 g,FOS banana powder 2.4 g,apple powder 2.4 g and 1.2 g carrot powder,spinach powder 1.2 g,GOS1.2 g,bile calciferol 1.75 mu g,retinoic acetate 61 mu g,L-ascorbic acid 5 mg,pyrophosphate iron 7.5 mg,3.5 mg,lactic acid zinc folic acid 27.5mu g,potassium hydrogen phosphate 77 mg,0.05 mu g pyridoxine hydrochloride,D-1 mg calcium pantothenate,D-biotin 30 mu g.Second period of infant and young child nutrition rice: rice meal 46 g,2 powder32 g,FOS 6.3 g,4.2 g wheat flour,corn flour,4.2 g oat powder 2.1 g,small rice 2.1 g,2.1 g,GOS 157.5 mg calcium hydrogen phosphate,bravery calciferol mu 1.2 g,70.4mu g retinoic acetate,dl-alpha tocopheryl acetate 0.4 mg,L-ascorbic acid 10 mg,0.05 mu g cyanocobalamin,pyrophosphate 7 mg of iron,zinc lactate 4.55 mg,46.5mu g,folic acid,potassium hydrogen phosphate 400.4 mg 0.1 mu g pyridoxine hydrochloride,D-0.98 mg calcium pantothenate,D-biotin 32 mu g.2.The infant and young child nutrition rice processing key technology research:enzyme solution and the key technology of extrusion for infant and young child nutrition rice processing,using the Box-Behnken experiment design and responsesurface analysis to optimize digestion process parameters as follows: pulp concentration is 13%,enzyme amount 0.4%(alpha amylase and beta amylase content of 8 U/g,respectively 292.52 U/g),enzyme solution temperature is 39 ℃,enzymolysis time 59 min,rice noodles makings hydrolysis degree of 34.13%;The optimum process parameters of optimized extrusion were: 13% liquid feeding,220r/min of screw rotational speed,163 of cavity body temperature,and 93.37% of rice flour substrate.By measuring the nutrient content of two process product contrast,digestion process than the extrusion process is superior,but the determination of its physical indicators,such as rice noodles microstructure,precipitation dissolving rate,bibulous rate,etc.,in extrusion process is superior to enzyme hydrolysis,and lower production cost,strong operability.3.The infant and young child nutrition rice functional assessment: through the determination of infant rice starch in vitro digestion rate and compared with commercially available products,the results show that the period of infant and young child nutrition rice starch in vitro digestion rate was 33.26±0.8%,the second period of infant and young child nutrition rice starch in vitro digestion rate was 32.61 ±0.95%,commercial infant rice starch in vitro digestion rate was 28.35±0.87%.Based on mice immune function test,determination of the thymus index,spleen index,serum Ig G,Ig M content and ear swelling rate,results show that the test product in increase the body’s immunity function and is better than that of commercial products.
