Palm oil is extracted from oil palm fruit.It is slightly sweet and can be obtained with different melting points.Palm oil is widely used in food,cosmetics,washing products and biodiesel.In the world,the production,consumption and trade of palm oil have exceeded soybean oil.In physiological functions,palm oil can prevent cancer,diabetes,and cardiovascular disease.Vitamin E and fertility of three enol in palm oil can obviously reduce cholesterol levels.In addition,it also plays a role in inhibiting platelet aggregation and reducing atherosclerosis.Liquid oil has the characteristics of easy oxidation and poor fluidity.The preparation of powdered oil from palm oil not only preserves the characteristics of the oil itself,but also improves its oxidation resistance and fluidity,so that it is easy to store and use.In this study,the spray drying technology was used to cover the palm oil,and the factors affecting the quality of the products and the morphology and properties of the microcapsules were analyzed.In the study of the emulsification process,soy protein isolate and maltodextrin were selected as wall material,sucrose ester and monoglyceride were selected the emulsifier.From the single factor experiment and orthogonal test we can see that,the ratio of sucrose ester and monoglyceride was 4:1 and the addition amount was 2%,the emulsifying time was 6 min,the temperature was 70.Microscopically,the size of the emulsion prepared was uniform,and there was no stratification when placed at 10 h at room temperature.The emulsion is relatively stable,which is conducive to the spray drying process.In the study of spray drying parameters,the atomizer speed is selected 27000 rpm,the feed temperature is selected 55~60,and the outlet temperature is about 93.From the single factor experiment we can get that,the inlet air temperature is 180,the wall material ratio is 1:2,the core wall ratio is 1:3 and the solid content are 20%.Under these conditions,there is less accumulation in the bottom of the tower in spray drying,and the yield of the microcapsule is higher and the microencapsulation efficiency is 78.4%.The products prepared are milky white,and the water content is 2.79%,It also have good solubility and fluidity.The products were spherical or ellipsoidal by scanning electron microscope,and most of the particles were smooth without rupture.
