Abstract/Summary:
The various factors that had effects on the microencapsulation of lycopene including selection of wall materials, formulation of compound wall materials, proportion of core-material and wall-material, inlet concentration of emulsion, homogenizing intensity, and temperature of entering wind were systematically studied by means of spray drying technique. The formulation of the microencapsulated products and the technology condition were optimized by orthogonal experiments. The outer structures of microcapsules were observed by Scanning Electron Microscopy(SEM). The storage stability of the products was measured, and the physical-chemical properties of the microencapsulated products were also evaluated.Casein Na, Maltodextrin, metamorphic amylum and β-cyclodextrin are all good wall materials. The best wall material proportion was screened out through emulsion stabilization and microencapsulation eficiency(MEE). The results show that the best support materials are the mixture of casein Na, Maltodextrin and β -cyclodextrin, the best proportion of which are . 40% casein Na, 45% Maltodextrin and 15% β-cyclodextrin.For mixed core materials (lycopene+salsd oil), based on best wall materials, the infection of emulsification HLB value, homogeneity velocity, concentration of support material and the proportion of core material was also studied. The results show that homogeneity pressure, concentration of wall material and the proportion of core materials strongly infect the quality of microencapsulation of lycopene. By orthogonal test, the infected sequence of factors was: homogeneity velocity Concentration of wall material>the proportion of core materials. At last, the best technological parameter are: homogeneity velocity 6000 rad, concentration of wall material 13%, and the proportion of lycopene 40%. The microencapsulation efficiency of final products was 87%.For single core material (lycopene), based on best wall materials, the kind of emulsion, the HLB value of , homogeneity pressure and inlet temperature was studied. The microencapsulation efficiency of final products was 72%.The results of preservative test showed that microencapsulating avoided the lycopene getting in touch with oxygen. So the storage stability of microencapsulated products would increase remarkably.The research about structure of the final products by SEM provided some information for the analysis of the quality of microencapsulated products. The results of observing by SEM indicated that microencapsulated products had a high quality of embedding. The above researches confirmed the optimum technology conditions and rational processing.The final products had a good appearance, properties and characteristics. They have acceptable taste and smell, dry, sphericall and good fluidity. The content of water was 2. 1%. The microcapsules of lycopene would have a profound developing potentiality.
