Palm oil was extracted from mesocarp of palm tree, which is rich of Vitamin A and E and also has good proportions between saturated fatty acids and unsaturated fatty acids. However, it is solid state in the room temperature.This study used screw-press process to obtain crude palm oil. The study content covered the process technology of palm olein and the microcapsule, including extracting and process technology, crystallization kinetics, physical and chemical character, the nutrients of palm oil, antioxidant ability and microcapsule process technology. The study aimed at providing new ideas and technical support for the new use of palm oil and further development. The main details are as follows:1. Study on extraction method and process technology of palm oilThe study chose two methods to evaluate extraction rate, namely solvent extraction and screw-press extraction, and extraction rate was49.4%,33.6%respectively. Considering the purpose of palm oil product, the study selected screw-press extraction method to extract crude palm oil.2.The crystallization kinetics of crude palm oilTo investigate the crystallization kinetics laws of crude palm oil in different temperature gradients, the study elect15℃ã€17℃and19℃to do the research, analyzing the Avrami kinetic model and related parameters. The results show that the Fittingdegree R2of17℃is highest (0.9942), the second is17℃and the last is19℃. The crystalline form is acicular, acicular and lamellar hybrid and lamellar at15℃,17℃and19℃respectively.3.physical and chemical character of palm oilAccording to the physical and chemical character of different palm oil samples, the study chose the moisture content, ash content, sliding melting point, acid value, peroxide value, iodine value and saponification value as quality evaluation index of process technology.4.The nutrients and antioxidant ability of palm oilThe study surveyed the content of Vitamin A and E, the composition of fatty acids and also observed the antioxidant ability of palm oil with0.02%ã€0.05%and0.1%TBHQ using FTC and TBA methods. The results proved that the nutrients of palm oil after fraction and refining process were destroyed slightly, the loss values of total tocols, β-carotenes were14%and17.4%, moreover, the unsaturated fatty acids ratio increased. The antioxidant ability of palm oil with0.02%increased greatly.5.The process technology of palm oil microcapsuleThe factors of wall materials ratio, ratio between wall material and core material, emulgator, entering air temperature, outlet air temperature had an effect on process efficiency. The consequence indicated that the parameters of process, which the ratio of wall materials was1’.2, the ratio between wall material and core material was1:2, the additive amount of emulgator was0.5%, entering air temperature was184.8℃and outlet air temperature was89.3℃,has the best process efficiency. Innovation:To solve the problems of clotting easily and nutrients loss of refining process, the study selected fraction method and modified refining process to produce palm olein, selecting maltodextrin and whey protein isolate as complex shell materials to produce the palm oil microcapsules, which has great properties. |
