The mutton sheep industry is a traditional industry that farmers and herdsmen in Inner Mongolia have long been engaged in and has played an important role in animal husbandry production. It is an important pillar industry in the agricultural and animal husbandry of Inner Mongolia Autonomous Region and the economic income of rural pastoral areas. The mutton sheep industryhas played an irreplaceable role in accelerating food conversion, expanding the employment of rural labor force, raising the income of farmers and herdsmen, and promoting the development of agriculture and related industries.Lamb, with its rich protein and calcium, potassium, vitamin B1 and other elements that are beneficial to human health and lower cholesterol and fat,is preferred by the consumers than other meat. Therefore, the sustainable and healthy development of the mutton sheep industry is of great significance to improving the residents’ dietary structure, and improving the income sources of farmers and herdsmen and even the stability of society. As consumption of mutton gradually increases, the change in mutton prices is getting more and more attention. The minor fluctuations in the mutton price not only regulate peopel’s consumption structure, but also have a direct impact on the quality of life of farmers and herdsmen and even the development of agriculture and animal husbandry. In order to stabilize the price of mutton and develop the mutton sheep industry, this paper is based on the theory of supply and demand, and starts with the background of the price fluctuation of mutton in Inner Mongolia since 2000.First of all,it gives a general description of the status of the development of the national mutton sheep industry and the current situation of the development of sheep meat industry in Inner Mongolia, through the comparison of the mutton price, inventory, and slaughter status in the country and Inner Mongolia. It has been found that the price of mutton in Inner Mongolia has been slightly lower than the average mutton price in China. At the same time, the fluctuation of mutton prices in recent years is greater than the fluctuation of average mutton prices in China.Second, this article focuses on analyzing the reasons that affect the price of mutton.Changes in lamb’s demand and supply are the main factors that affect lamb’s price fluctuations. For example, the prices of substitutes, household consumption, consumer preferences, etc.all affect the lamb price from the demand side. The production cost of mutton, the scale of feeding, and imported mutton with price advantages affect the price of mutton from the supply side. There are also other factors that affect the price of mutton, such as drought conditions, epidemic situation, policy orientation, and the establishment of a free trade zone, which play a guiding role in mutton price fluctuations in Inner Mongolia. Moreover, the quantitative analysis method was used to determine the degree to which each factor affected the fluctuation of mutton price. Finally,on the basis of the above analysis,it is proposed that efforts should be made to increase the improvement of sheep breeds、 integrate animal husbandry and poverty reduction with the development of the sheep industry 、 broaden and explore new distribution channels 、 and produce healthy green lamb products through enhanced supervision of the lamb market、and improve the livestock industry insurance and epidemic prevention system and other measures to stabilize the price of lamb.
