| With the increase demand of people,dairy products play an important role in people’s diet structure,but many dairy products quality and safety incidents have seriously harm people’s consumer confidence.With the government to strengthen the construction of the dairy products quality and safety management system,at the same time,dairy products manufacture enterprises also gradually realized the importance of product quality and safety for its survival and development,gradually introduce new production equipment and management methods.Many scholars also from different perspective study the quality and safety of dairy products,introduce new ideas for the regulatory departments,so that to achieve control of the dairy products quality safety risk.However,the research of dairy products quality and safety risk system were very few,what’s more,the research of dairy products quality and safety risk control needs to scientifically analysis and evaluate risk factors based on the quality and safety theory.This paper is based on the quality and safety management theory of dairy products,risk control theory and operational management theory,and took dairy products production enterprise as the research subject,to find and analysis the quality and safety risk from the perspective of enterprise operation and management and use the combination of AHP and HACCP quality management method to selected 35 evaluation indicators from three levels of raw milk production,dairy processing,dairy distribution,at the time,by using the combined method of factor analysis with fuzzy matter-element to to evaluate the indicators,and obtained six comprehensive risk assessment indicators values,which is based on the European proximity value.Based on the evaluation results and the existing problems of dairy products quality and safety,to improve raw milk production,operation and management,product prices and other aspects of quality risk control suggestions for dairy production enterprises.One innovation point of this paper is,from enterprise management perspective and focus on the factors that cause quality and safety risk of product,using the analytic hierarchy process to extract 35 indicators used to explain the level of risk from raw material production,product processing,product distribution three levels,and set up a dairy quality safety risk evaluation index system,then used the combined method with factor analysis and matter-element analysis conducted evaluation research.Another innovation point of this study was,took monthly data of the enterprise production and operation process to be more specifically explain the risk indicator,at the same time it can also avoid the subjective error influence from data itself,and make the acquired research results to be more objective,more close to actual practice. |
