Study On Discipline And Resist In The Restaurant At The Perspective Of Micro Power Theory

With the advent of the post-industrial era,Human labor has entered into a service-oriented stage.Catering industry,as one of the more rapidly growing industry services,Catering industry and its labor relations have become an important research topic.The research on the micro power and catering services is widely used in management/economics/politics and sociology etc.But most only involves one of the key words,it is rare to see discussions that combine both at the same time.This study focused on the "physical discipline" in the restaurant area.Through a field study of a restaurant chain,Explore the daily production life,this paper explores the techniques and means of the manager's physical discipline in daily production and life.How does the server use its own initiative to resist the restaurant and its management,That is,how do the "discipline" and "resistance" to show in the restaurant field,And further,analyzes the power relations behind it.This study is based on the existing theory and field research,This paper probes into the various training techniques and means on the body of waiter in the field of the restaurant.Through the mechanism of time,space,body technology and rituals ects,By means of monitoring,standardization of adjudication and inspection ects,And punish the offenders.which have the effectiveness of training to a certain extent.Then this study describes the waiter's resistance to the discipline in the restaurant field in detail,"Frequent job-hopping" and "build before and after the stage",Specific,such as"chat and slander,grinding workers or lazy,lying,pretend to obey and watch,etc." are waiter's hidden resistance practice in the daily production and life.Based on this,This study further analyzes the power relationship between "discipline" and "resistance" in the restaurant area.The power position and relationship between the manager and the attendant in the restaurant are dynamic."See and be seen","say and be said" and"power collusion" are the concrete embodiment of the power game between manager and waiter in the restaurant labor process.Finally reflect on the limitations of this study and future research prospects,and on this basis summarizes the full text.In a word,this study tries to explain the operation mechanism of Foucault's micro power in the postmodern society,explores the power relations in the labor process of the catering industry,reflection on the significance of the research on labor relations,Exploring the regulation effect of Micro-power and its future development.
