With the acceleration of globalization,coffee has gradually entered the daily life of Chinese people,and the Chinese coffee market develops rapidly at the same time.Readers’ needs for coffee knowledge is also increasing.Coffee has developed a systemic knowledge,and the easiest way for readers to acquire related knowledge is to read popular science books.This is a translation report.The source text is a popular science book Water For Coffee which intends to introduce the chemical and physical properties of water and its inherent materials as well as how they impact the flavor of coffee.Popular science book is a variant of English for science and technology.Features of popular science book can be summarized as “Scientificity”,“Literariness”,“Popularity”,“Enjoyment”.The Skopos Theory is the guiding theory of this translation report,which is the most important translation theory in German Functionalist Theory.“Skopos Theory” especially emphasizes the possibility of differences between the intention of translation and the writing purpose of original author.Due to different intentions,the translation strategies and the translation skills chosen by translators will also be different.“Skopos Theory” has three main rules: Skopos Rule,Coherence Rule and Fidelity Rule where the Skopos Rule is the top-ranking one.In the Introduction,the translator mainly talks about the task of translation including the background,purpose and significance of the translation practice and the structure of the translation report.And in the Translation Process,the translator recounts the description of translation process,including the preparation of pre-translation,the plan and schedule of translation task and the quality control of the translation text.Moreover,the translator chooses the “Skopos Theory” and explains the reasons from three aspects: analysis of the source text,significance of Skopos Theory and its three rules,and the merits of Skopos Theory in the translation process of popular science books.Furthermore,in the Case Study,the translator introduces the feature of the words,the structure of sentences used frequently,the logic and cohesion of the paragraphs and the relation between the figure and caption to demonstrate the validity of “Skopos Theory” for the translation of popular science books.Finally,the translator analyzes the shortcomings and mistakes in the translation process and sums up experience and lessons that the translator gained.
