Wine culture has been in the mankind’s history for a long time, however, a series of issues after drinking have caused great harm to the society. As a result, nowadays how to quantitatively assess the impact of drinking on health has become a important research task. In order to find a kind of characteristic parameters that could evaluate the effects of alcohol on brain fatigue and brain cognition and provide scientific basis for healthy drinking, electroencephalograph(EEG) and event-related potentials(ERP) were adopted in this paper. This specific research contents were shown below:(1)EEG and ERP were introduced into the research of human brain fatigue situation that after acute alcohol consumption. Three batches of experiments up to 52 persons were conducted and then 312 groups of effective data were obtained. According to the national(GB19522-2010) stipulation: the blood alcohol concentration(BAC) range of drunk driving, the BAC of alcohol consumption degree was divided into three parts, including low 100mg/L, medium 500mg/L and high 825mg/L.(2)Exploring the characteristic parameters of healthy drinking assessment based on EEG. R value and gravity frequency GF were calculated in this study by using EEG data. The changing curve of the brain fatigue within two hours after alcohol consumption were obtained. It was found that(1)During the low degree alcohol consumption experiments, the brain fatigue parameter would slip 4%~5% until 60 minutes and the curve would return to normal.(2)During the medium degree alcohol consumption experiments, the brain fatigue curve would increase gradually, and after 60 minutes it would arrive peak(the brain fatigue value is larger than 40% of normal one). Then the curve would return to normal. The brain fatigue curve after the medium degree alcohol consumption would decrease slowly until 120 min after experiments.(3)During the high degree alcohol consumption experiments, the brain fatigue parameter would become large to 57% of normal one after 60 minutes, which had the same change trend with that of last experiment, but the brain fatigue value was still larger after 120 min( larger than 20% of normal one).(3)This paper designed the auditory Oddball model by ERP to study the P300 component changes within two hours. Analysis of the EEG data collected by Pz lend to get the incubation period and amplitude of P300 component that after different degrees acute alcohol consumption in different times, finally, combining another subjective questionnaire, this paper find that(1)Effect on brain cognition after low and medium degree drinking were not obvious, the abnormal rate was less than 5%.(2)High degree drinking could produce damage to the brain cognitive function in a short time(the abnormal rate was close to 60%), performance as influencing the attention, memory, and computational power of the human brain. In summary, this paper proposed the EEG-based health assessment factors(fatigue factor like R value and gravity frequency GF) and ERP-based health ingredients(P300 component) through the study of drinking health assessment. It basically reaches the goal of the drinking health assessment and would provide an important reference for the future standard establishment.
