Using nitrogen fertilizer was a key issue for yield nutritional quality, quality of health, and t he sustainability of soil sustainability on the vegetable scale, and also was a research hotspot to effectively improve the quality and safety of vegetables. The experiment was used urea as nitrogen fertilizer to studied the effects of nitrogen fertilizer on the growth, physical and chemical indexes of Perilla frutescensand soil environment; The effect of nitrogen fertilizer on the growth and development, nutritional quality, hygienic quality, storage quality and soil environment to provide scientific basis for scientific fertilization. The main conclusions are as follows:1.The amount of nitrogen can improve soil quality, the soil bulk density decreased, the porosity increased.,while the application of nitrogen fertilizer will lead to soil acidification and excessive acidification can inhibit the absorption of soil nutrients by Perilla frutescensand.2.With the increase of fresh weight and the fresh weight decreased that resulted in the instability of roots and with the increase of the proportion,it was eventually easy to lodge in the later period of growth,,lodging was more serious than N4,and the lodging degree of N3 was light,so the suitable nitrogen fertilizer for plant growth was 7.5-12.5kg/667m~2.3.The effect of nitrogen fertilizer on root growth showed the first increase and then decreased trend. When the excess nitrogen(N17.5kg/667m~2),resulting in reduced root length, the distribution of roots in soil and a reduction in the root volume decreased; The Perilla frutescens of southern lodging probability is greater than the other two varieties.4.The suitable nitrogen fertilizer could promote the synthesis and accumulation of soluble sugar, soluble protein, vitamin C and decrease of cellulose content in Perilla frutescens, while excessive nitrogen fertilizer can play an inhibitory role.Under N4 treatment, the soluble sugar content growth reached 131.71% CK,and the content of cellulose was reduced by 21.82% on Nanhan Suzi;under N3 treatment, the content of VC growth rate reached CK37.07% on Jilin No.3;under N2 treatment, the content of soluble protein growth rate reached CK 81.94% on Yanbian No.1.Comprehensive analysis of the nutritional quality, the nutritional quality of Perilla frutescens of Nanhan Suzi and Yanbian No.1 varieties could achieve the best when the nitrogen content in the range of 12.5-17.5 kg/667m~2.the specieces of Jilin No.3 could achieve the best quality on the nitrogen content in12.5 kg/667m~2.5.With the increase of nitrogen, accumulated nitrate and nitrite of perilla frutescens first increased and then decreased, then increased to the phenomenon, the reason may be the lack of nutrients in the later period, the growth time of leaves is too long, resulting in the accumulation of nitrate and nitrite in the leaves,so after the growth of leaves not edible period.6.The application of N fertilizer was significantly correlated with yield, with the increase of nitrogen fertilizer, the yield decline of seed increased first and then decreased, indicating that the optimum nitrogen application rate was 7.5kg/667m~2.To sum up to improve the soil environment quality and appropriate amount of nitrogen could improved the yield of Perilla frutescens and nitrogen of production efficiency, but excessive nitrogen will inhibit root growth, which leads to the decrease of Perilla frutescens on soil nutrient absorption capacity, that effecting the yield and nutritional quality,This test to ensure the Perilla frutescens nutrition quality, yield and on the role of the soil into consideration,The economic and environmental benefits to the best when the nitrogen content is controlled in the range of 7.5-12.5kg/667m~2.
