In this study, a slaughter experiment and a feeding experiment were conducted to investigate the effects of fermentation bed feeding on meat quality and growth performance of pig, so as to provide exploitation of this farming methods with an theoretical basis. A total of 120 Duroc×(Landrace×Yorkshire) crossbred piglets with average weight(20 kg) were chosen in the experiment, the piglets were randomly divided into 2 groups:1. treatment group (fermentation bed feeding); 2. control group (normal cements floor feeding).6 replicates of 10 piglets each. The trial was spit into two phases (20-50 kg BW and 50-90 kg BW). After the feeding experiment, the slaughter test of 12 pigs which were randomly selected in treatment group and control group (6 replicates of 1 pig each) was conducted to analyze the meat quality and carcass quality. The present research consisted of four parts as follows:1. Effects of fermentation bed feeding on growth performance and meat quality of pigsThe results showed:1) During 20-50 kg BW phase, the ADG of treatment group was improved by 2.2% compared with the control group(P> 0.05); During 50-90 kg BW phase, the ADG of treatment group was improved by 1.1% compared with the control group(P> 0.05).2) During every phases, fermentation bed feeding couldn’t affect significantly on ADFI(P> 0.05).3) The difference of the F/G between the two groups were not significant(P> 0.05). In the first phase(20-50 kg), the F/G of treatment group was higher than that of the control group; In the second phase(50-90 kg) and the whole phase(20-90 kg), the F/G of the treatment group was lower than that of the control group.2. Effects of fermentation bed feeding on meat qualities and carcass characteristics of pigsThe results showed that fermentation bed feeding couldn’t affect significantly on muscular qualities and carcass characteristics (P> 0.05).Compared with the control group,the drip loss of the treatment group was decreased by 2.4%; The shear force of the treatment group was decreased by 26%; The differences of pH(pH1 and pH24) and the meat color (a*、b* and L*) between the two groups were not significant(P> 0.05).3. Effects of fermentation bed feeding on fatty acid composition of serumThe results showed that fermentation bed feeding significantly increased C20:0 (P< 0.05) and C22:6 content (P< 0.01)of the serum in pigs at 50 kg BW and significantly increased C18:1 (P< 0.05) and MUFA content (P< 0.01)of the serum in pigs at 90 kg BW.4. Effects of fermentation bed feeding on fatty acid composition of muscleThe muscle C18:2、C20:2 and PUFA content were very significantly higher than those of the control group (P< 0.01); the muscle C20: 4 and C18:3 content of the treatment group was significantly higher than those of the control group(P< 0.05),.All results mentioned above showed that fermentation bed feeding could improve the growth performance, carcass characteristics and muscular qualities of pigs.
