Researches On The Carcass Performance And Meat Quality Of Three Local Pig Breeds In Shandong Province

To fully understand three local pig breeds from Shandong hidden carcass and meat quality characteristics which were from Wulian black pig breeding farm of Rizhao,Yimeng black pig breeding farm of Linyi and Licha black pig breeding farm of Jiaozhou City three black pigs populations,Under the same conditions from 30 kg to 100 kg,each population sample 14,13 and 10,respectively.Study on all of the following meat quality traits by taking M.longissimus dorsi.The main results of the measurement showed that:1.Body size character:Black pig from the town of Wulian,Licha and Yimeng hidden in lumbar spine number were not significantly different?P>0.05?.three groups in body length,bust,the number of thoracic were significantly different?P<0.05?.Black pig in the town of Yimeng and Licha which body height difference was not significant?P>0.05?,and were significantly higher than the Wulian black pig?P<0.05?.2.Carcass performance:Carcass performance of live weight before slaughter,carcass weight in Wulian Black pig and Licha Black pig were significantly lower than the Licha Black pig?P<0.05?.Wulian Black pig and Licha Black pig hidden in slaughter rate were not significantly different?P>0.05?,and were significantly higher than the Yimeng Black pig?P<0.05?.Yimeng Black pig and Licha Black pig were no significant difference?P>0.05?on ham ratio,the area of eye muscle and average backfat thickness.the ham ratio and the area of eye muscle were significantly higher than Wulian Black pig?P<0.05?,the average backfat thickness were significantly lower than the Wulian Black pig?P<0.05?.3.Meat quality character:Three Black pig populations in meat color,marble shaped pattern,the rate of water loss,cooking loss,drip loss,intramuscular fat content,dry matter content,crude protein were not significantly different?P>0.05?.Meat quality characteristics of Wulian Black pig and Yimeng Black pig in the pH24 was no significant difference?P>0.05?and were significantly higher than Licha Black pig?P<0.05?.Meat quality characteristics of Yimeng Black pig,Wulian Black pig and Licha Black pig in the tenderness was no significant difference?P>0.05?,but the tenderness of Wulian Black pig and Licha Black pig was significant difference?P<0.05?.4.Three Black pig populations in the total collagen levels,soluble collagen content and insoluble collagen content were not significantly different?P>0.05?.The cholesterol levels of Licha Black pig and Wulian Black pig,Yimeng Black pig were not significantly different?P>0.05?,and The cholesterol levels of Wulian Black pig and Yimeng Black pig were significantly different?P<0.05?.5.Three Black pig populations in the total SOD activity,MDA concentration and T-AOC were not significantly different?P>0.05?.Three groups of Black pigs muscle has good resistance to oxidation.6.Fatty acid comparison:The caprylic acid and arachidonic acid content of Yimeng Black pig and Licha Black pig was not significantly different?P>0.05?and significantly higher than the Wulian Black pig?P<0.05?.The total unsaturated fatty acid content was not significantly different?P>0.05?,The EPA content of Yimeng Black pig and Licha Black pig was not significantly different?P>0.05?and significantly higher than that of the Wulian Black pig?P<0.05?.7.Three Black pig populations in Asp,Yhr,Glu,Ala,Cys,Val,Met,Lle,Leu Tyr,Phe,Lys,His and Pro content were not significantly different?P>0.05?.The arginine content between Wulian Black pigs and Yimeng Black pigs was not significant?P>0.05?and significantly lower than the Licha Black pig?P<0.05?.Three Black pig populations in delicious amino acids?DAA?content,essential amino acids?EAA?and total amino acids?TAA?content were not significantly different?P>0.05?.but in DAA content and TAA are Licha Black pig>Wulian Black pig>Yimeng Black pig.This study compared three local pig breeds of Shandong in terms of the body size character,Carcass performance,body size,meat quality character,muscle collagen content,antioxidant capacity,amino acid and fatty acid content,etc.The results can not only provide objective and scientific data for the fine meat quality of Shandong local pig breeds,but also lay a solid foundation for the conservation,breeding,development and utilization of Shandong local pig breeds.
