Global Comparison Analysis And The World Heritage Values On Guizhou Moutai Liquor Culture

Guizhou Moutai Liquor is one of the world's three famous distilled liquor,as Chinese national and cultural liquor,whose quality has been acknowledged by Chinese,foreign scientists and general consumers and has been famous all over the world now.Cultural heritage stores a large amount of information,from which we can see the historic progress of human civilization of a country.A correct understanding of the value of Moutai is the premise of scientific protection,rational use and application of world cultural heritage.A comprehensive analysis with literature analysis,field investigation and office analysis were used,revealing the significant world value under the global perspective.The comparison sites are mainly selected from the world cultural heritage list and world heritage tentative list with the characteristics of wine culture.There are following conclusions and discussion drawn from the characteristics of Moutai Liquor Culture Site,global comparison,heritage value and conservation management:(1)The same Moutai Liquor can't be produced leaving Moutai Town,which belongs to the three main characteristics of physical geography environment: the first is the unique geological structure of Moutai Town;the second is the water quality in Chishui river;the third is climatic environment of hot in summer and warm in winter,the light wind and less rain,which are suitable for microbial breeding.The comprehensive geographical environment factors determine that the brewing environment of Moutai is unable to migrate and duplicate.Guizhou Moutai Liquor culture heritage includes liquor-making industry ruins,salt transport dock,unique brewing technique,red culture,unique wine production environment and National Liquor Museum of history and culture,which are the model of traditional people's use of special geographical environment and land for making white spirit,and can be used as an outstanding example of land use and special witness of a long history of Moutai.(2)We selected seven locations from sixteen locations of worldwide cultural heritages and seven locations of tentative list with wine culture to compare with cultural heritage of Guizhou Moutai Liquor.Through the comparison,we finding out that they have significant differences in the constitutional elements of cultural heritage of wine,environment of wine production and cultural connotation.In the various industries of liquor of China,Guizhou Moutai Liquor is the only treasure which assembles green food,organic food and local protection of originally productive place,which possess abundant culture value.(3)Moutai Liquor is brought up by local people based on complex factors,including climate that has warm winter,hot summer,gentle breeze and slight rain,geology,topography,soil,hydrology and biology,and these complex factors are unable to migrate and replicate.Moutai wine cultural heritage site is a typical representative of the integration of human and nature,and it can be declared to World Heritage List as cultural landscape.Moutai wine cultural landscape contains a variety of related wine culture,so that it has its outstanding universal value and uniqueness both at home and abroad,which can nominate for world cultural heritage according to criteria iii and v.(4)There are a lot of label sites that related to Moutai wine,such as “special cultural environment”,“distinctive microbial system”,“non-migratory climate”,“area of origin protection”,“geographical indication” and so on,and some of these label sites have been included in the national key cultural relics protection zone and they are the important source of Moutai wine cultural landscape.However,under the erosion of modern civilization,Moutai wine cultural landscape sites are so fragile,so,many problems do need not only the efforts of local governments,but also need the enhancement of international discourse system for technical assistance from domestic and international experts or organizations.
