With the accelerated process of population aging,the extension of human life as well as the prevalence of chronic diseases and sub-healths,the demand for natural and nutritional health food is growing.In recent years,the research of ingredients,forlumas and products for anti-oxidation,anti-aging and the enhancing immunity have become a active field in the reseach of health food.Therefore,the development and research of health wine of anti-oxidation,anti-aging,strengthening the immune has great potential.The development and research of Polygonum multiflorum has attracted wide attention because of the bioactive components of stilbene glycosides,anthraquinones,polysaccharides phospholipids,etc.the pharmacological studies have revealed that Polygonum multiflorum has high value of health care as a result of the function of antioxidant,enhancing immubity,inhibition of atherosclerosis.However,the health care products of Polygonum multiflorum were mainly compound preparation,but health wine was few reported.Consequently,this study is committed to developing a new health wine of anti-oxidation and anti-aging from the aspects of extraction process,turbidity removal process,product quality standards and anti-oxidation combined with modern means of detection and analysis.It will provide related technical reference to further industrial development and production of Polygonum health wine and play an important role in promoting benign diversification development of Polygonum multiflorum.The main results are as follows:(1)The HPLC detection of stilbene glycoside and anthraquinones and the UV spectrophotometric detection of total saponins were methodologicaly studied in the raw material of Polygonum multiflorum and Polygonum multiflorum health wine.The results showed that the established HPLC method had good precision,stability,repeatability,and average recoveries of samples,and could be used to examine stilbene glycoside and anthraquinones and the UV spectrophotometric method to examine total saponins.(2)The stilbene glycosides,total saponins,dry extract rate and sensory evaluation were used as the index to investigate immersion method,reflux method and percolation method.The result showed that the immersion was the best extraction method for the process of Polygonum multiflorum health wine.Univariate and multivariatew were used to investigate the immersion method for the best technical parameters,it was found that the optimal process is base wine degrees 65,the solid-liquid ratio 1:10,soaked 3 times,soaked time 12 hours.(3)The stilbene glycosides,total saponins,dry extract rate combined with the sensory evaluation were used as the index to investigate activated carbon adsorption,refrigerationfiltration and microporous membrane filtration,.The result was found that the frozen filtration was best turbidity removal methods of the of Polygonum multiflorum health wine.Univariate and multivariate were used to investigate the Frozen filter turbidity for the best technical parameters,frozen temperature-5 °C,frozen 9h,frozen 1 times,the turbidity removal process was best.(4)DPPH and FRAP methods were respectively used to detect free radical scavenging capacity and total antioxidant capacity of the raw material of Polygonum multiflorum and Polygonum multiflorum health wine.The results was found that the Polygonum multiflorum health wine had strong antioxidative capacity in accordance with the extraction and turbidity removal process for the above-mentioned and achieved the intended purpose of the process design and screening process of Polygonum multiflorum health wine.
