| Aviation food is a kind of high-risk food due to its characteristic.With the continuous development of civil aviation,Chinese aviation food market remained around 10% growth in recent 2-3 years while the global aviation meal industry has only 2-3% growth.Within five years from 2005,the sales volume of airline meal was doubled.With overwhelming emergence of promotion conditions and opportunities,how to avoid aviation food safety incidents and how to create enterprise brand competitiveness concerning the evolving airline food industry will be the responsibility and challenge faced by every aviation meal company.The establishment of food traceability system is an effective way to solve incontrollable airline food quality,to ensure food safety,to enhance the competitive power,and even to be an essential part of strategic planning of airline companies.This thesis took catering department of Xiamen Airline Co.Ltd.as a classic example.Using HACCP analytical principle the food chain was divided into menu design section,procurement and acceptance section,producing and processing section,packaging section and distribution section according to the process of airline food production.Then,safety trace index and process trace index were separately determined in these sections according to hazard analysis and evaluation.With trace indexes,the simulation model of airline food quality safety traceability system was designed.Besides,following the process,the functional design of each subsystem module was also completed and the whole traceability system was cascaded based on advanced central database,two-dimensional code labels and RFID tags.Furthermore,a representative airline dessert--red jujube mousse was chosen to verify the effectiveness and feasibility of aviation food quality safety traceability module via reverse tracing method.Through the successful application of quality safety traceability in Xiamen Airline,our research provide a useful reference for other airline catering companies. |
