The problems of food safety not only jeopardize life and health of people, but also lessen the public’s confidence in food safety and restrain the sustainable development of food industry. As a means for the publicity of food safety information, the Traceability System for Food Safety integrates and monitors the information of the whole process of food processing as well as food production, so that the management of food safety could be improved, the sense of responsibility in enterprises could be elevated, the safety risk of food could be reduced, the distribution, origin and causes of the products with problems could be traced. Moreover, the system could make easier the acquisition of food safety information and rebuild consumers’ confidence in food safety, which, in turn, makes the system more reliable and more effective and contributes to a better management of food safety in our country.It has been5years since the implementation of The General Regulative Rules for Quality Safety in Food-processing Enterprises in Fu-jian Province. And this is the very context for this thesis, which, taking food companies in Fu-jian Province as subjects and adopting such means of research as theoretical analysis, statistical analysis and surveys, presents the following findings concerning the Traceability System for Food Safety.For one thing, the issue of food safety in our country is encountering lots of problems and challenges, and it is a pressing obligation for our government to find ways to ensure quality safety in the process of food production and rebuild consumers’ confidence in food safety. The establishment of the Traceability System for Food Safety is, therefore, of practical significance.For another, the nation-wide implementation of the General Rules mentioned above facilitates the documentation of quality safety information during the processing and production of food, which also lays a sound foundation for the establishment of the system under discussion.Besides, the relatively poor management, the incomplete recording as well as the unconvincing reliability of quality information in food companies, coupled with such factors as the scale and property of the company, the market environment, staff quality, government policies, competition from counterparts and market recognition, all would exert an effect on the establishment and function of this system. Moreover, some proposals are raised to promote the advance of the Traceability system for Food Safety, such as updating relevant laws and rules, expanding the applicability and ensuring the credibility of this system, as well as nurturing market for traceable products.
