At present, agriculture overall profit in our country is not high, the farmers’ income is generally low. High consumption, natural resources inefficient and ecological environment deteriorating are the social background. It is imperative that low consumption for sustainable development of modern agriculture. Consecutive annual “number one file” can be seen that we must to constantly strive to improve the production efficiency of agriculture in our country, actively to adjust the structure of rural economy, to increase farmers’ income, to promote the sustainable development of economy of our country, to improve people’s quality of life, promote social stability harmonious has a far-reaching influence. Edible fungus industry as an important part of modern agriculture, its remarkable economic benefits, social benefits and ecological benefits grow rapidly, but from the perspective that social factor optimization configuration of the market economy, the edible fungus production is still faced with many problems in China, more decentralized operation in various areas, production lack of standardization, large-scale, technical efficiency in low level, the obvious contradiction between small-scale production and big market, farmers as the recipient of the market price, its esay to influenced by means of production, Labour costs and farmers own behavior, those restrict the development of industrialization of edible fungi.In the present situation of edible fungus industry, it is particularly important that to study the economic efficiency and industry layout and analysis production of edible fungi, In 2014 ~ 2015, adopt rural investigation, production tracking, questionnaire investigation, from the perspectives of farmers’ production behavior, as pleurotus ostreatus production as represented in Hebei Tang conty, using the nonparametric analysis method(the three stage DEA method) for the empirical study of the economic efficiency and its influencing factors The main conclusions of this text are as follows:(1) At present, the farmers’ economic efficiency is only 0.586 of the pleurotus ostreatus production in Tang conty, Suffered serious losses. the economic efficiency of 85.18% farmers is lower than 0.7. Technical efficiency loss is the main aspect of the low cost efficiency.(2) Land investment and labor input are the main aspects affecting the output benefit of the sample farmers. In the production, the farmer attach importance to the input of the main ingredient, but exists the waste of land and labor input.(3)Production technical efficiency are greatly influenced by the external environment and random error.The main factors that affecting production technical efficiency about the pleurotus ostreatus are: single tent area, head of the household, level of education, planting experience and householder age.(4) The production about pleurotus ostreatus has many problems for the Farmers. 59.26% of the farmers are homemade strains, quality the good and bad are intermingled; 70.37% of farmers planting management techniques from “by self experience”, the production business philosophy of the peasant household is not science, 88.89% edible fungi vendors come to purchase, the peasant household’s ability to participate in the market is not strong, 77.78% of farmers think that the cause to affect sales price is of bidders level demand, market circulation channel is not smooth, Market circulation channel is not smooth, which leads to the mushroom sales blindly, to a large extent influenced the stability of the pleurotus ostreatus industry.On this basis, this study put forward to production adjustment and countermeasures and Suggestions to promote the development of edible fungi on high continuous:(1) Promote the market supply and specialization production of Bacteria. Actively encourage, guide and support the farmers to use the third-party high quality trains high quality, strengthen the supervision of the production and circulation about the strains and oyster mushroom, provided a reliable guarantee for pleurotus ostreatus industry development.(2) Promotion production technology of mushroom standardized, supporting the farmers to management on moderate scale.Promote the local land circulation,promote standardization greenhouses, supporting the farmers to expand the appropriate scale of production; Strengthen the techniques of mushroom cultivation and training guide of production management, improve the level of farmers planting technology and management skills. Encourage, guide and support the planting large to joint scientific research institutes, to establish “market- production – technology” support system of the industrialization of the trinity.(3) Encourage farmers to specialized production, as the actual problem as the guidance in farmers production, encourage farmers to specialization in production, at the same time,strengthening the management sales; Guide the higher conomic efficiency of farmers to market sales, mushroom processing industrial chain should longitudinal extension field and transfer, speed up the production of social division of labor.Economic, social and ecological benefit is remarkable of Mushroom industry. On the basis of the study results, in the face of low economic efficiency of farmers, we should to corresponding mushroom production technology improvement and the optimal allocation of resources, to promote the development of mushroom productivity have the function of the “Effect of macro fee province”. In accordance with the industrial development theory, through the innovation of the industrial economic policy, will encourage mushroom production progress to specialization, scale, standardization, make it become the significant circular agricultural and advantage industry with Chinese characteristics.
