Wild vegetables are very popular foods with special flavor and long utilization history and have high share of market in south part of Yunnan Province. Nevertheless most kinds of the wild vegetable are unknown about their nutritional ingredient, harmful substance as well as food safety evaluation. So it is necessary to analyze the nutritional component and other harmful substances of the often consumed wild vegetables, providing basic data for their evaluation of nutrition and food safety and also suggestions for their reasonable utilization.The nutrient and harmful ingredients of 13 kinds of Wild vegetables in Southern Yunnan were analyzed in this paper, with the instrument test of HPLC, ICP-MAS, Ion chromatography, Amino acid analyzer. The component data of water, protein, carbohydrate, fat, cellulose, vitamin C, amino acid, metallic element and nitrate in the 13 kinds of wild vegetable were determinated. Then the SPSS software was used to compare the data between cultivated vegetables and wild vegetables for their nutrient analysis and food safety evaluation.The results were as following:The nutrition of wild vegetables is higher than cultivated vegetables, especially protein, dietary fiber, P, K, Ca, Mg are significantly higher than cultivated vegetables. And the wild vegetables contain eight kinds of essential trace elements. The evaluation result of amino acids in the wild vegetables showed that the content of taste amino acid in wild vegetables is much higher than cultivated vegetables. Eight kinds of the wild vegetables, including Pteridium aquilinum var. latiusculum, Portulaca oleracea, Myosoton aquaticum, Parabaena sagittata, Rhododendron hancockii, Amaranthus viridis and Taraxacum mongolicum, were suggested for eating with ideal protein content. According to the food safety assessment result, the harmful metal content in three samples(Rhododendron hancockii, Myosoton aquaticum, Taraxacum mongolicum), were beyond the national standard, and the nitrate content in all the samples is minimal.These results suggest that the main wild vegetables in south yunnan, especially Pteridium aquilinum var.latiusculum, Portulaca oleracea, Parabaena sagittata, and Amaranthus viridis, have higher nutritional value and less food safety problems, are suitable for the development and utilization.
