Huge amounts of wastes, such as grape branches, grape pomaces were generated during the process of vineyard pruning and wine brewing. However, only few of them could be reused. As most of them were piled up at random or burning, it is wasting lots of resources and bringing amounts of pollutions to the environment. In this study, grape pruning branches, grape pomaces were used as main cultivation material of Pleurotus eryngii. Through comparing the influence of different grape branches and grape pomaces replacement ratio on Pleurotus eryngii, the optimal formula of Pleurotus eryngii cultivation was investigated. The results are as follows:(1) Grape branches of Victoria, Hutai NO. 8, Zana were used as the main cultivation material of Pleurotus eryngii, branches, bean pulps, corn flours were added. Mycelium growth was observed, the hypha growth of Victoria treatment showed stronger vitality. Hyphae average daily geowth rate was 20.6 mm/d, higher than the others. The biological conversion rate of Victoria, Hutai NO. 8 and Zhana showed slightly difference. From the nutritional analysis of Pleurotus eryngii, we found that the difference of crude fat contents was not obvious. The crude fat contents of Victoria were slightly higher than other treatments(0.94%). In terms of crude protein and crude ash contents, the difference between Hutai NO. 8 and Zana was not obvious. Victoria treatment was significantly higher than other treatments(2.81% and 0.83%, respectively). The crude fiber contents of three treatments were significantly different. The crude fiber contents of Victoria treatment were as high as 3.01%, significantly higher than other treatments.(2) Grape pomaces were added into the cultivation matrix. The replacement ratio was 0, 20%, 40%, 60%, 80%, and 100% respectively. With the increase of replacement ratio, the growth of hypha become slower, the days of full of hyphae in bags increased, and hyphae average daily rate decreased. The nutritional analysis of Pleurotus eryngii showed that crude protein contents crude fat contents were increased with the replacement ratio. The crude fiber contents was decreased with it.The replacement ratio of 80%, has the highest crude protein contents, crude fat contents, and lowest crude fiber contents(4.47 %、0.33 %、4.09 % respectively), the mushroom have a higher nutrient contents and good mouthfeel. As the the replacement ratio increased, the contents of Mg, Mn, Cu in Pleurotus eryngii gradually increased, while the contents of Ca reduced. The 80% replacement ratio have the highest Mg, Mn, Cu contents,(212.7%, 1.49%, 2.80%). The contents of Ca(6.34%) were the highest in the cultivation matrixes that have no grape pomace. In addition, the contents of total amino acids were significantly related to replacement ratio.
