Grape polyphenols are strong antioxidant to remove free radicals. In recent years, withrapid development of wine industry, more grapevine canes and pomaces were abandoned,which caused environmental pollution. Development and utilization of grapevine canes andpomaces are mainly methods of polyphenols extraction and purification, but thecomprehensive study on mono-phenols and synergistic effects of polyphenols and otherantioxidants had never been carried out in the past years.In this paper, the study providestheoretical references for better application of polyphenols. The main conclusions are asfollows:1. Using high performance liquid chromatography determinesed mono-phenols of50grapevine canes and9grape pomaces. By the principal component analysis, the mainmono-phenols had been obtained respectively: salicylic acid, morin acid, rutin, epicatechin,mountain nai acid, catechin, vanillic acid, tonka-bean acid, resveratrol, chlorogenic acid,quercetin, tangeretin, caffeic acid, gallic acid in50grapevine canes;and gallic acid, benzoicacid, catechin, syringic acid, moric acid, vanillic acid, rutin, quercetin, epicatechin,resveratrol, alicylic acid, caffeic acid, coumarin, mountain nai acid in9grape pomaces.Thecommon mono-phenols are epicatechin, catechin, rutin, resveratrol, moric acid, mountain naiacid, quercetin, gallic acid, salicylic acid, vanillic acid, caffeic acid.The comparison of18mono-phenols in9grapevine canes and pomaces haveconclusions that there are hardly tangeretin and tonka-bean acid in the white grapevine canesand pomaces, and other mono-phenols contents are slightly lower than red grapevine. Morletpomaces contains abundant gallic acid, epicatechin,salicylic acid,their contents basically34mg/Kg-63mg/Kg.Moreover the contents of catechin, epicatechin, gallic acid, rutin arerelatively high in riesling canes,especially rutin being52.681mg/Kg. For the total amount ofmono-phenols, its content of grape pomaces is higher than these of grapevine canes2.The extract from cabernet sauvignon grape pomaces under ultrasonic assistedextraction, separation and purification of macroporous resin and vacuum concentration havebeen made from polyphenol powder.Matching0.1%ascorbic acid,0.004%grape polyphenol,.05%citric acid, the best match have been obtained by orthogonal test, providing reference forfood, medicine and other fields. 3. This study explored antimicrobial effect of multiple antioxidants on E. coli,Staphylococcus aureus, Salmonella using method of Oxford cup.That demonstrate that itsantimicrobial effect on the three bacteria is increasing with the increase of the multipleantioxidants concentration, The antimicrobial effect on E. coli and Staphylococcus aureus ismore and more strong,and which on Salmonella become slow. Under the same concentration,the antimicrobial efficacies of multiple antioxidants on three bacteria are better than grapepolyphenols.
