With the rapid development of science and technology, the threat of veterinary drug residues in animal derived food has gradually aroused widespread concern in the world. In recent years, some illegal food producers and business operators overdose illicit drugs, didn ’t comply with the relevant national laws and regulations. Food safety incidents occured frequently, at the same time China’s food safety incidents have been frequently reported. The issue of food safety has attracted wide attention, which also sounded the alarm for the management personnel of food safety in our country. Sulfonamides is a kind of traditional chemical synthesis of antibacterial drugs, which is widely used in some parasitic disease prevention and treatment of bacterial infections in veterinary and animal husbandry. It has the advantages of wide antimicrobial spectrum, convenient use, low price, stable quality, etc., in particular, it can significantly enhance the antibacterial activity and even bactericidal effect after the combination with the antibacterial synergistic agent. But improper use can lead to be enriched in animals. More over, can cause accumulation gradually in the human body which harm is mainly teratogenic and mutagenic and carcinogenic effects. In recent years, pork has been the first choice for people in meat food, the consumption of pork each year is increasing. If the use of veterinary drugs are not standardized, it will cause excessive vete rinary drug residues and the potential impact on people’s health problems. China’s regulation of sulfonamides in food animal liver and muscle for MRLs is 100 μg?kg-1(Department of agriculture Bulletin No. 235th). Therefore, efficient and accurate sulfonami des veterinary drugs residue detection and by the detection results for risk assessment to safeguard the people’s health and public health safety has important theoretical and practical significance.The HPLC method was adopted to detect the residues of sulfonamides in 2015 9-10 months. 100 pork samples of eight cities and counties in Heilongjiang province were randomly collected. The residual risk was also assessed. Results show that 100 samples were not detected sulfamonomethoxine, sulfamethoxazole, sulfadimethoxine and sulfaquinoxaline. Sulfamethazine detection rate is 1%. The residual concentration of the positive samples was 54.88 μg?kg-1, not exceeding the maximum residue limit of 100μg?kg-1. Sulfonamides residues in pork products in Heilongjiang Province food safety index is 4.57 ×10-3, far less than 1, shows that the total amount of sulfonamides residues in pork of Heilongjiang province will not be harmful to people, and its potential harm to the human body is acceptable.
