Abstract/Summary:
Dorper × Hu F1 Sheep and Hu Sheep were selected as experimental objects in this study to carry out both productive performances and meat quality comparison.64 3-months-old healthy sheep whose body weight had no differences were selected in the test, while 32 Hu Sheep (16 male,16 female),32 Dorper-Hu hybrid F1 Sheep (16 male,16 female),32 Hu Sheep were divided into four replicates of half male and half female, the same replicates to Dorper-Hu hybrid F1 Sheep. After the 10d pre-feeding period and 80d fattening period, we carried out the comparison of the growth performance. The trial ended at the 6th months old, at the end of the test, two sheep were selected in each repeated (1 male and 1 female respectively), each 8 of Dorper-Hu hybrid F1 Sheep and Hu Sheep respectively were slaughtered, and longissimus dorsi muscle and hip biceps femoris muscle were collected to carry out comparison of slaughtering performance and meat quality. The results were as follows:1.Comparison of production performance:(1) The weight and daily gain of 6-months-old Dorper-Hu hybrid F1 Sheep was significantly (P<0.01 and P<0.05 respectively) higher than that of 6-months-old Hu Sheep,6-months-old Dorper-Hu hybrid F1 Sheep increased 8.6% daily gain in contrast with 6-months-old Hu Sheep. The cannon circumference of 6-months-old Dorper-Hu hybrid F1 Sheep was significantly (P<0.05) bigger than that of 6-months-old Hu Sheep, but there were no statistical difference between two kinds of sheep with body height, body length and heart girth (P>0.05), although the body length and heart girth of the 6-months-old Dorper-Hu hybrid F1 Sheep tend to be higher than Hu Sheep. (2) The carcass weight of 6-months-old Dorper-Hu hybrid F1 Sheep was significantly (P<0.05) heavier than 6-months-old Hu Sheep, while there was no statistical difference between two kinds of sheep with the slaughter rate (P>0.05). The hybrid advantages of Dorper-Hu hybrid F1 Sheep was obvious, weight and daily gain of 6-months-old Dorper-Hu hybrid F1 Sheep was significantly greater than Hu Sheep; Meat production of Dorper-Hu hybrid F1 Sheep was higher than the Hu sheep under the same conditions.2. Comparison of meat quality:(1) The level of crude protein in longissimus dorsi muscle of six-month-old Dorper-Hu hybrid F1 Sheep was significantly higher than the six-month-old Hu Sheep (P<0.01); The level of free fatty acids in longissimus dorsi muscle of six-month-old Dorper-Hu hybrid F1 Sheep was significantly less than the six-month-old Hu Sheep (P<0.05); The level of moisture, fat, phospholipid and triglyceride in longissimus dorsi muscle of six-month-old Dorper-Hu hybrid F1 Sheep were less than six-month-old Hu Sheep, there were no statistical difference (P>0.05). (2) There were no statistical difference in the amino acid content and composition in hip biceps femoris muscle between six-month-old Dorper-Hu hybrid F1 Sheep and six-month-old Hu Sheep(P>0.05), The level of all kinds of amino acid in hip biceps femoris muscle of six-month-old Dorper-Hu hybrid F1 Sheep were higher than the six-month-old Hu Sheep except for proline and glycine. (3) 27 kinds of fatty acids were detected in longissimus dorsi muscle of six-month-old Dorper-Hu hybrid F1 Sheep and six-month-old Hu Sheep, there were no statistical difference in the types of fatty acids in longissimus dorsi muscle (P>0.05).The level of elaieimic acid (C8:0), arachidonic acid (C20:4) and lignoceric acid (C24:0) in fat of longissimus dorsi muscle of Dorper-Hu hybrid F1 Sheep were significantly higher than six-month-old Hu Sheep (P<0.01); The level of a-linolenic acid (C18:3(n-3)) in fat of longissimus dorsi muscle of six-month-old Dorper-Hu hybrid F1 Sheep was significantly higher than six-month-old Hu Sheep (P<0.05); there were no statistical difference in the other fatty acids of longissimus dorsi muscle (.P>0.05).The level of total monounsaturated fatty acids (MUFA) in fat of longissimus dorsi muscle of six-month-old Dorper-Hu hybrid F1 Sheep was significantly lower than six-month-old Hu Sheep (P<0.05); There were no statistical difference in total polyunsaturated fatty acids (PUFA), total saturated fatty acids (SFA) and the ratio of the total polyunsaturated fatty acids and saturated fatty acids (P/S) between six-month-old Dorper-Hu hybrid F1 Sheep and six-month-old Hu Sheep (P>0.05). (4) There were statistical difference in elasticity and chewiness of hip biceps femoris muscle between six-month-old Dorper-Hu hybrid F1 Sheep and six-month-old Hu Sheep(P<0.05), howerer there were no statistical difference in hardness, adhesion, cohesion, gumminess and resilience of hip biceps femoris muscle (P>0.05). Nutritional value of muscle protein of Dorper-Hu hybrid F1 Sheep was higher than the Hu Sheep; The proportion of functional fatty acids in fat of muscle of Dorper-Hu hybrid F1 Sheep was higher than the Hu Sheep; Meat of Hu sheep was more flavor, more tender and juicy than Dorper-Hu hybrid F1 Sheep; Muscle texture quality of Hu Sheep was slightly better than Dorper-Hu hybrid F1 Sheep.
