Morchella esculenta is a kind of both medicinal and edible mushro oms, rich in nutrients and active ingredients, and they have biological activity and efficacy, such as regulating metabolism of growth and development activities, im prove cardiovascular function and activity of anti-aging, etc. But the growth mech anism of Morchella special, which makes the research of morel fruiting body part is limited. With the rise of the fermentation industry and application, fermentatio n has been found to obtain nutrients and active ingredients of mycelium and fruit body basically the same, as it’s more convenient access, make it simple, people of morchella mycelia conducted a series of studies have found that contains a lo t of mycelium polysaccharide, phenolics, protein, lipid, and content is rich in trac e elements and vitamins, so people gradually using mycelium instead of fruiting body of morchella. In recent years, Bioactive peptides as a kind of very importan t active ingredients to human body, people are already a lot of research, proved t he peptide can adjust the body function, such as regulating metabolism of growth, development and other activities, improve cardiovascular function and anti-aging activity, also some ask these functions of peptides can improve food provides goo d foundation for using peptides. And found through the literature research and rep ort about morchella mycelia peptide but not seen, so the test for morchella myce lia peptides for the following research(1) Respectively through to the culture medium carbon source, nitrogen sourc e, inorganic salt and p H of screening to determine, and out through orthogonal de sign for the amount of each ingredient, soluble starch addition amount of 20 g, y east powder is 15 g, the dosage of KH2PO4 addition amount of 2 g, the addition of Mg SO4 quantity to 2 g. Through a medium of morchella myc-elium, yield can be up to 9.20 mg/l.(2) By single factor test and orthogonal test, the extraction temperature, extra ction time, liquid ratio, grain size, ethanol concentration and p H six factors, five l evels, peptides screened out the best extraction condition for: solid-liquid ratio is 20:1, the extraction time is 8h, the particle size is 60, extraction temperature 50 d egrees ℃ the concentration of ethanol is 50%, p H is 7. Morchella mycelium pept ide production up to 53.1 mg/100 g.(3) identified by the physicochemical properties of the extracted from Morche lla mycelium protein containing substances in nature, namely protein or peptide, t he peptide extraction of Morchella esculenta Tricine-SDS-PAGE gel electrophoresis liquid obtained extracts contained low molecular mass polypeptides, namely that of Morchella esculenta mycelium peptides is a small molecular determination of p eptide, suggesting the possible existence of components and by reverse phase high performance liquid chromatography.(4) Combining literature research morchella mycelium polypeptide of three ki nds of free radical oxidation test, so it is concluded that morchella mycelium pept ides on hydroxyl radical and superoxide anion free radicals and DPPH have certai n remove effect, effect is obvious, provide a reference for follow-up study morche lla mycelia of the peptides.
