The Status Of Water-soluble Total Sugar And Reducing Sugar Content Of Flue-cured Tobacco In Panxi And The Relationship With The Other Quality Traits

In order to figure out the relationship between the content of water-soluble sugar, reducing sugar of flue-cured tobacco in Panxi and other quality indicators, and provide the basis for rational use of tobacco, flue-cured tobacco leaves in 2011,2012,2013 in Panxi were used as material. Variance analysis, multiple comparison, cluster analysis were used to analyze water- soluble total sugar a n d r e d u c i n g s u g a r c o n t e n t o f P a n x i f l u e- c u r e d t o b a c c o, a n d c o mp a r e Panxi flue-cured tobacco quality with domestic and external flue-cured tobacco. The grey correlation analysis, stepwise regression, partial correlation analysis were used to study the relationship between water- soluble total sugar, reducing sugar content and appearance quality, the other routine chemical compositions, neutral aroma substances, organic acid, sensory quality. The results were as follows:(1) The content of water-soluble sugar of Panxi tobacco ranged from 14.5% to 44.5%, and the average value was 36.13%. The content of reducing sugar ranged from 13.2% to 37.9%, and the average value was 29.42%. The total sugar content was mainly centered in the 30%-40% interval, and the reducing sugar content was mainly centered in the 20%-40% interval. The ratio of reducing sugar to total sugar was mainly between 0.7-0.9.Flue-cured tobacco in Yunnan was the most similar with Panxi. The content of water-soluble sugar and reducing sugar were much more than Henan, Hunan and Guizhou.The content of water-soluble total sugar and reducing sugar presented as follows: middle leaf > lower leaf > upper leaf. The water-soluble total sugar content of middle leaves, lower leaves was significantly higher than that in the upper leaves. The reducing sugar content of middle leaves, lower leaves was significantly higher than that in the upper leaves. The ratio of reducing sugar to total sugar was 2.5% lower than that of Henan. The content of water-soluble total sugar presented as follows: Yunyan87> Honghuadajinyuan > Yunyan85. The content of water-soluble total sugar of Yunyan87 was significantly higher than Honghuadajinyuan, extremely significantly higher than Yunyan85. The content of reducing sugar presented as follows: Yunyan87> Honghuadajinyuan > Yunyan85. The content of reducing sugar of Yunyan87 was significantly higher than Yunyan85. The difference of sugar was not significant between different varieties of two varieties.(2) The content of water-soluble total sugar of upper leaves, middle leaves in Panxi were regular in space distribution, which decreased from southwest to northeast. The water-soluble total sugar and reducing sugar of upper leaves were lowest in the northeast of Meigu. The content of water-soluble total sugar of lower leaves was low in southwest and northeast of Panxi, and which was high in the middle region.The content of reducing sugar of upper leaves in Panxi decreased from the southwest to northeast. The content of reducing sugar of middle leaves was higher in northwest, southeast, and content of reducing sugar of middle leaves was lower. There was no clear boundary between the regions of different reducing sugar content. The content of reducing sugar of lower leaves were lower in the southwest and northeast area, and the content of reducing sugar of lower leaves was higher in middle area.(3)Most of flue-cured tobacco leaves were orange-colored, lemon-yellow-colored, mature, moderate oil. The leaf structure came from less loosen level to l oosen level. The leaves ranged from slight thickness to moderate thickness. The tone ranged from strong level to concentrated level. The appearance quality was stable.The content of water-soluble total sugar and reducing sugar were negatively correlated with color, and positively correlated with oil. The content of water-soluble total sugar was positively correlated with maturity, body. The content of reducing sugar was positively correlated with leaf structure. The content of water-soluble total sugar had greatest impact on body and oil, and the content of reducing sugar had greatest impact on leaf structure and oil. Two sugar ratio was negatively correlated with identity and positively correlated with oil score.(4)The content of nicotine, total nitrogen and potassium contents in flue-cured tobacco leaves of Panxi were appropriate. The content of chlorine was low, which should be increased. The content of starch was high, and the of nitrogen nicotine ratio and potassium chloride ratio were high. The content of water-soluble total sugar and reducing sugar were greatest negatively correlated with nitrogen nicotine ratio, and total nitrogen and nicotine came after. The content of water-soluble total sugar and reducing sugar were greatest positively correlated with sugar nicotine ratio, and potassium came after. The content of water-soluble total sugar was positively correlated with starch, potassium chloride ratio.(5)The order of the content of neutral aroma components in flue-cured tobacco leaves in Panxi was as follows: neophytadiene > carotenoid > cembranoids > Maillard reaction products> phenylalanine. The grey incidence order was overall similar between water-soluble total sugar and reducing sugar, but the only difference lied in the order of the cembranoids,phenylalanine. The content of water-soluble total sugar and reducing sugar had most close relationship with carotenoid, Maillard reaction products. The order of the gray correlation of sugar and reducing sugar was same.(6) The content of malic acid in the leaves of flue-cured tobacco of Panxiwas highest, and the content of margaric acid was lowest. The hexadecanoic acid had most positively correlated with water-soluble total sugar, followed by malic acid, levulinic acid, fumaric acid. Oleic acid and linolenic acid had mostnegatively correlated with water-soluble total sugar, followed by margaric acid,myristic acid, 14-methyl-hexadecanoic acid. Texadecanoic acid had most positively correlated with reducing sugar, followed by oxalic acid, malic acid. The s tearic acid had most negatively correlated with reducing sugar, followed by margaric acid, arachidic acid, succinic acid, 14-methyl-hexadecanoic acid, isocitricacid. Two the correlation coefficient of the sugar was significantly or signify-ca ntly correlated with the other indexes.(7) The aroma quality of flue-cured tobacco in Panxi ranged from good level to a little better level. The aroma quantity ranged from less sufficient to sufficient. The aftertaste was less comfortable. The odor ranged from slight level to less level. The irritation ranged from slightly large level to less level. The sweet aftertaste, dry feeling, exquisiteness and clustering ranged from middle level to strong level. The total score ranged from 49.25 to 73.43.The content of water-soluble total sugar and reducing sugar were positively correlated with indexes of sensory quality. The water-soluble total sugar and reducing sugar of flue-cured tobacco in Panxi were good for the indexes of sensory quality within limits. The content of water-soluble total sugar had greatest impact on exquisiteness, and least impact on aroma quantity. The content of reducing sugar had greatest impact on score of odor, and least impact on aroma clustering. Two sugar ratio was negatively related to other indexes, and the two sugar ratio was the most irritating to tobacco leaf.
