:Because of the large wastage in the transportation and storage process of pepper fruit, prolonging the freshness of postharvest storage is one of the important goals of pepper breeding. With23varieties of pepper fruit as material, this article examined the spoilage and variation in nutrients content of different varieties and different types of pepper fruit during the postharvest transportation and storage. Pepper varieties with excellent transportation and storage quality are selected and the main fruit characters related to postharvest transportation and storage quality are ascertained. And with12Z37as an example to explore the impact of different package, including woven bags, PE bags and cartons, upon quality of postharvest storage. The main test results are as follows:1. During the transportation of pepper fruit, the rate of turn color> the rate of mechanical damage> the rate of fruit decay. And the after-ripening coloring and mechanical damages are the major loss of pepper fruit postharvest transportation. Different appearance of the pericarp, neak trait and fruit pointed character has significant difference in the transportation loss of pepper fruit, and the effect to mechanical damage rate is the biggest. The main character influence on transportation loss is fruit cavity size and per fruit weight, the transportation loss of pepper fruit with small fruit cavity and weight is less.2. Wilting, decaying, ripening and senescence are the major problems of pepper fruit during postharvest storage. Turnning color and fruit weight loss is the main loss in20days storage, the fruit stalk rot and fruit decay is the major loss after20days storage. After45days storage under the low temperature, the rot rate of fruit stalk>the rate of turn color>the rate of fruit decay>the rate of fruit weight loss. There are differences in storage wastage of pepper fruit with different type. The rate of turn color and fruit weight loss is the highest and the rot rate of fruit stalk and fruit is the least in pod pepper. The rot rate of fruit stalk and fruit is higher in cayenne pepper and horn pepper, but the difference of the rate of fruit weight loss is not obvious.3. The characters such as appearance of the pericarp, fruit color, neak trait and fruit pointed character have little effect on postharvest storage, but the characters such as fruit shape index, per fruit weight, fruit flesh thickness, fruit cavity size, peduncle length, peduncle width and fruit water content are related to postharvest storage effect.4. The preservation effect of woven bag is the worst in the packaging materials. The rate of weight loss, turn color and fruit decay is larger and the vitamin C content is lower with the packaging treatments of woven bag during postharvest storage. PE bags packaging treatment could effectively reduce the weight loss and the ripening of fresh pepper fruit to turn red, and maintaining a high vitamin C content, but it has little effect on slow down the decay of the pepper fruit. After45days storage, the vitamin C content of the23varieties are significantly reduced, and the percentage of the varieties that the soluble sugar content, soluble protein content and capsaicin content is decreased is43.5%,47.8%and60.9%respectively. The effect of fruit characters to the extent of soluble sugar and soluble protein variation during storage is not obvious, and the variation of vitamin C has significant negative correlation relationship with fruit flesh thickness, and the variation of capsaicin is significant positive correlated with per fruit weight, fruit flesh thickness and fruit cavity size. The soluble protein content, vitamin C content and capsaicin content are significant positive correlated with the content after45days storage, but the correlation between soluble sugar content before and after storage is not significant.
