In recent years, with the continuous development of regional urbanization, large commercial projects with food and beverage area, more and more commercial building in order to create a good indoor environment, not only need to have appropriate temperature, humidity, but also to provide clean air conditions, when large commercial buildings in the dining area of the kitchen can not meet the requirements, will have a greater impact on the building environment. Therefore, this paper carried out the investigation and Research on the influence of the kitchen ventilation to the building environment in the large commercial building, and used the method of field test analysis and software simulation.First respectively in winter and summer season in A department store A visit of the indoor environment research and questionnaire survey, the second A four in xi "an other department with dining area for the questionnaire survey analysis, the universality and validity verification department A survey. Statistical analysis results show that, during the winter air flow condition in various shopping malls are worse than in the summer, and soot pollution serious than in the summer, and comparison of five shopping malls the results of A survey found that during the winter, malls inside environment condition A is the most poor in five mall, pollution is more serious,unhealthy phenomenon existing in the four other malls in malls in A basic existence,therefore the mall A field test and analysis.Were measured in the winter and summer seasons mall A seven layer dining area and eight layers in the cinema,exhaust air rate and the dining area in pollution is serious in the restaurant were tested.Analyzing the test results,the factors that affect the environment of the restaurant in the dining area are found out,and the corresponding improvement measures are put forward. Through the test analysis and improvement, it can provide reference for the test of the large commercial building,More important is to provide the accurate theoretical basis for the correct design and operation management of ventilation system in large scale commercial projects. In the early stage of design not only to consider the thermal equilibrium, but also to take into account the wind balance, only in this way can we ensure the building in the actual operation process, can not only have good air quality, but also will not affect the temperature and humidity of the various functional space.According to the plan of the dining area, the physical model is established, and the simulation results of the velocity field and temperature field in the dining area are compared with the field test results, and the correctness and rationality of the model are verified. In addition, according to the distribution of the air quantity of different points in order to three kinds of wind, respectively, in the food and beverage area of three different ways to improve the speed and temperature field simulation analysis,The results show that when the air quantity of 60% is added to the seven level, the remaining 40% is the most ideal way to fill in the six layer space. In this method, the effect of temperature on velocity field and temperature field is changed, and the optimal critical air temperature is 2, and the air temperature is lower than 2.
