The aim of the study is to produce hydrolyzed protein powder of bovine bone.In this experiment,the Mongolia bovine bone was used as material,ethanol was used for degreasing and bovine bone was hydrolyzed by Alcalase.In addition,different kinds of deodorization agent was added into the powder in order to seek out a best way to eliminate bad smell of the powder. The main results are as following:1. The bone powder best degreasing condition was determined by single factor experiment and orthogonal test:the ethanol concentration was 95%, solid-liquid ratio was 1:15g/mL, degreasing time was 9h, degreasing temperature was 45℃, bovine bone powder degreasing rate was 90.52%;2. Regard the degree of hydrolysis and the dissolution rate of solid matter as the reference index,the bovine bone was hydrolyzed with pepsin、neutral protease、"M" protease and Alcalase respectively.The result showed that:the degree of hydrolysis of the Alcalase was 7.82%, the dissolution rate of solid matter of Alcalase was 10.35%. Alcalase hydrolysis ability is better than the other three kinds of protease.3. On the basis of single factor tests, orthogonal test was used to optimize the processing technology of enzymatic hydrolysis.It is discovered that hydrolysis was most effective at a temperatuer of 50℃ and a pH of about 9 and time of 5h,with 6000 u of enzyme added per gram of protein and solid to liquid ratio of about 1:12 g/mL.Under these condition, the degree of hydrolysis of bovine bone powder was 8.86%, dissolution rate was 12.25%.4. Compared with quantity between degreasing and hydrolysis, it was easily discovered that the hydrolyzed powder quantity was more than the degreased powder’s. The result showed that:the processing of hydrolysis can make bone powder becoe more delicate.5. Four methods(β-CD embedding method/Chemical hiding method/fermentation method/Chinese herbs hiding method) were investigated and compared to eliminate the bad odour of the powder. Sensory analysis revealed that the effective deodorization methods are 10%β-CD solution and 0.75% NaCL+3%Green Tea and Chinese herbs hiding method(2%Herba Houttuyniae+2%Angelica+1%Amomum Villosum+2%Green Tea)...
