| Bovine bone collagen peptide is a small molecular polymer with molecular weight between protein and amino acid,which is usually composed of more than two amino acids.It plays an important biological function in the whole life process of the body.Bovine bone is rich in collagen.From the existing literature,the common extraction methods of bovine bone collagen mainly include high-pressure assisted extraction,acid method,enzyme method and acid soluble enzyme method.Among them,acid extraction of collagen and enzyme extraction of collagen are the most common.At present,the high-value processing of bovine bone collagen peptide powder is often accompanied by the production of odor substances,which seriously affects the edible quality of bone collagen peptide powder and the expansion of sales market.In this paper,headspace solid phase microextraction gas chromatography-mass spectrometry(HS-SPME-GC-MS)combined with relative aroma activity value was used to identify the main odor volatile substances in odor peptide powder:isobutyric acid,caproic acid,acetic acid,butyric acid,isovaleric acid and valeric acid.Their common characteristics are unpleasant odor.The deodorization effects of biological fermentation,physical adsorption and chemical methods(ethylation)on heteroolfactory bovine bone collagen peptide powder were preliminarily discussed.The sensory evaluation score of peptide powder was the highest after deodorization by chemical method.The chemical method was to realize the deodorization of heteroolfactory bovine bone collagen peptide powder by catalyzing the esterification of heteroolfactory substances in peptide powder with ethanol by ultrasonic assisted edible alkali,Finally,the chemical deodorization process was optimized by single factor and response surface methodology.When the reaction time was 28.43 min,the amount of ethanol was 3.19%,and the reaction temperature was 75.41℃,the sensory evaluation score reached the highest 71.16 points,so as to achieve the purpose of deodorization,and provide technical support for the deodorization process and industrial production of bovine bone collagen peptide powder. |
