In recent years, there has been a series of an endless stream of food qualityproblems around China, For instance, such as the “Sanlu milk”,“wasteoil”,”Clenbuterol" and so on, which is harmful to people′s health, and a bad impact oncitizen’ life on a large extent, furthermore, putting a negative social influence. In orderto ensure the safety of food, looking for effective measures to control food quality risk,scholars from domestic and international academic community have already started toconduct research on this issue, and yield a series of theory and practice outcomes. Inabsorbing the domestic and foreign research results in this foundation, on the basis ofthe theory of supply chain management, risk management theory and the BP neuralnetworks theory as guides, Meanwhile, which also make use of the basis of foodproduction enterprises as the core of the supply chain, putting forward food productionenterprises in the supply chain′s particularity, and analyzing the supply chain risk root offood production enterprises. In addition, the supply chain risk factors and influence wasalso discussed, In the meantime, the assessment model of food production enterprisewas built, and the feasibility of the method was verified by a specific case. Finally,which indicate the management countermeasures of food production enterprise supplychain risk. The main research contents are as follows:1. There are very different characteristics in the different supply chain, as well as therisk factors would differs accordingly, on the basis of the special nature of the supplychain of food production enterprises, this article reveals the differences andcharacteristics of the safety requirements, business objectives, user groups and manyother aspects of the supply chain of food production enterprises, respectively, in termsof the logistics, information flow, capital flow and other aspects of the supply chain.2. This paper discusses the supply chain risk root of food production enterprisesfrom the system and management point of view, the supply chain of food productionenterprise risk is divided into two aspects: the system external risks and system ofinternal risk from the system point of view. 3. On the basis of the characteristics of the supply chain of food productionenterprises and risk sources, this paper aims to analyze the risk factors of the supplychain of food production enterprises, develop the risk factors library of the supply chainof food production enterprises, and explore the role of the different risk factors.4. Based on theory of BP neural network, and the establishment of food productionenterprises of supply chain evaluation index system, which came up with a foodproduction enterprise supply chain risk assessment model, in addition, with theassistance of the MATLAB neural network, through the sample training and testing,making sure the error was controlled in a target range. Finally, the feasibility of themethod was verified by a specific case.5. According to the risk management current status of the food production enterprisesupply chain, on the one hand, on the basis of consisting elements of supply chainsystem, we analysis of the supply chain risk control measures of food productionenterprises, respectively from logistics, information flow and capital flow, on the otherhand, we discussed the control measures from the basis of the four economic entitiesinvolved in the supply chain from enterprises, consumer, media and government.6. Finally, the main conclusion to this paper has been summarized and the futureresearch directions were also indicated.The content and results of these studies have provided a new angle of thinking andmethods to the supply chain risk management of food production enterprises, which putthe food production enterprises as the core. It also has done great theoretical referenceand practical guide to the future supply chain risk management research of the foodproduction enterprises.
