Anthocyanidin is a kind of flavonoid coloring matter which is widely indwelled in many plants. As a result of its security, vivid color and luster, anti-oxidation and other function of health care for human, in order to making our’s works and lives better, it has been put into industrialization produce. Sageretia theezans Brongn belongs to sageretia of rhamnaceae, which is a special scandent subshrub widely distributed in South China. The edible fruit of Sageretia theezans Brongn is paid less attention by people though it richly rich in anthocyanidin for the reason that it is a potential source of natural pigments.The extraction technology, content, component, and physicochemical property of Sageretia theezans Brongn fruit anthocyanidins(STFA) were studied. The results are as follows:1. The edible fruit of Sageretia theezans Brongn were used as experimental material. The extracting method of anthocyanidin was set up through single factor parallel experiment:the best extracting solvent is aqueous solution of hydrochloric acid(0.001mol·L-1), the better extracting method is lixiviating way, solid(g)-liquid(mL)ratio is1:10, extracting temperature is40℃, extracting time is one hour for three times, the accumulative extraction content of total anthocyanidin was2.53mg/g in fresh fruit. 2. Then anthocyanidins were separated from the extract by ion-exchange resin. A set of technology about resin adsorption and desorption was establishedl:pH of STFA extract is2.0, one hour was the adsorptive time,35℃was the adsorptive temperature,3Vb·h-1was the sample velocity;70%alcohol as the desorption solution, pH of eluting solvent was2.5, the velocity was gradient which from10to2Vb·h-1. The rate of production of STFA is58.2%according to this technique. Its color value is increased to71.94after it was purified by ion-exchange resin.3. The anthocyanidins were analyzed by LC-MS, and results showed that anthocyanidins were Cy-3-Sp-5-Glu, Pt-3-(6’-Mal)Glu, Mv-3-Glu, Pn-3-(6’-Mal)Glu, and their relative content were0.38%,22.57%,44.32%,30.86%respectively.4. Stabilities of the anthocyanidins were investigated. The results showed that the STFA was stable under indoor natural light, ultraviolet ray, infrared ray and microwave radiation in a short interval. The STFA had a better heat stability under65.1℃. The anthocyanidin was stable at a acidic condition (pH<6).5. Besides, the abilities of anthocyanidin on scavenging DPPH radicals were detected. And results showed that the high-purity STFA by positive ion-exchange resin column has a good performance in scavenging DPPH free radical when pH value is4.5.
