The experiment of extracting oil from Xanthoceras sorbifolia Bunge seed by supercriticalCO2fluid was carried out. The effections of particle size, extraction pressure, extractiontemperature, extraction time on oil extraction yield were discussed.The process conditionswere optimized by the response surface method(RSM).The results displayed the optimalconditions of oil extraction: extraction pressure28MPa, extraction temperature42℃,extraction time192min.Under this condition, the extraction rate of Xanthocerassorbifolia Bunge seed oil is81.22%.The basic properties of Soxhlet extraction oil, supercritical carbon dioxide extraction oil,cold pressing oil and post-processing cold pressed oil were analysed.Using gaschromatography analysed the fatty acid composition and content of Xanthoceras sorbifoliaBunge.Distribution of Xanthoceras sorbifolia Bunge oil was also studied.The result indicatesthe sn-2bit on the fatty acids of Xanthoceras sorbifolia Bunge oil vast majority was theunsaturated fatty acids,as much as99.21%.The content of saturated fatty acid was only0.79%.Prepare Xanthoceras sorbifolia Bunge protein concentrates by ethanol extraction.Theeffection of alcohol concentration, liquid-to-solid ratio, extraction temperature, extractiontime on the contents of the product protein was studied.The optimal conditions of oilextraction as follows: alcohol concentration65%, liquid-to-solid ratio6:1, extractiontemperature45℃, extraction time70min, under this condition, the contents of the productprotein was68.94%.The NSI and PS of the protein meal and two protein concentrates werestudied. At last, the amino acid compositions of protein meal and protein concentrates wereanalysed. The results showed that the protein content was rich in Xanthoceras sorbifolia bungekernel and the essential amino acid was complete. The content of glutamic acid (16~23%)was the highest, followed by arginine (7~10%). The content of cystine was the least, lessthan1%. Conclusion by the amino acid pattern comparison: the champions league fruit ofamino acid patterns and amino acid pattern close to human body, exposition Xanthoceras sorbifolia bunge protein has a high nutritional value. Have a excellent development andutilization potential.The experiment of classification of the preparation of Xanthoceras sorbifolia Bunge proteinwas carried out. The content of albumin in total protein among defatted meal was the highest57.8%, followed by globulin17.9%, alkali soluble protein and alcohol soluble protein wasrelatively low, the content was2.3%and1.0%respectively. Then, the relative molecularweights of the composition proteins were tested by SDS-PAGE. The results displayed that thealbumin’s main relative molecular weight is102.70,84.72,70.82,57.95,55.99,41.55,37.06,35.82,34.79,27.04,19.79kDa; the globulin’s main relative molecular weight is52.95,42.88,35.78,33.36,19.57kDa; the alcohol soluble protein’s relative molecular weight is53.11,28.06kDa; the alkali soluble protein’s main relative molecular weight is52.39,42.46,38.72,36.55,19.56kDa.
