To explore the difference of the quality in the different varieties of walnuts qualitatively andquantitatively determine the the main cultivated walnut varieties nutrient content, comprehensiveevaluation of various cultivars of walnut varieties of fruit quality, to identify Xinjiang walnuts and otherprovinces walnut quality differences, establish quality walnut brand, increase outreach efforts to expandthe walnut products sales market, promotion of our region walnut seed will play a positive role. Thereserch studied "XinXin2"and "Wen185" in the main producing areas of XinJiang and cultivars"LuGuang","JinLong1","LiaoHe3","Lvling","LiaoNing1","Xiang Ling"etc.11varieties of thenutritional quality of the fat content, amino acid content, fatty acid content, protein content, moisturecontent, and the content of dietary fiber, carbohydrate content, ash content, tannin content ofpotassium and calcium content,iron content The zinc content of selenium content and phosphorus contentmeasured average transverse diameter of the appearance quality, average fruit weight, take the kernel ofdifficulty, degree of shell fruit rate, the rate of damaged fruit, dark spots and fruit rate, shellingpercentage, walnuts points probability comparison. The results show that:The "XinXin2"and "Wen185"from Aksu Wensu in Xinjiang Province and "Lvling" from the theLincheng County in HeBei Province appearance quality has certain advantages.Principal component analysis and comprehensive analysis of the34components of the11differentvarieties of walnuts, two species of Xinjiang on the "XinXin2"and "Wen185" do not take advantage ofthe composite indicator assessment, Xinjiang walnut take advantage of the proteins, amino acids, andthe tannins indicators.11varieties of walnuts nutrients are divided into three categories by cluster analysis ("Lu Guang","Jin Long1","Lvling","Wen185"),("LiaoHe3","LiaoHe1",”XiangLing “,"XinXin2"),("Zhonglin1","Liaoning1","bubble walnut").Higher unsaturated fatty acid content of11varieties of walnut-like varieties,11kinds of saturatedfatty acid content of the walnut samples were higher than7.1%, to ensure that the health needs of thepeople.Walnut various mineral nutrient content in descending order: P> K> Ca> Fe> Zn> Se, P, K,Ca’s content is much higher than Fe, Zn, Se. The walnut varieties content of Fe, Ca, Zn was nosignificant difference, the content of P, K, Se have larger gap.The fat content of "Bubble walnut" and "Zhonglin1" of is generally higher,the tannin content of"Bubble walnut" and "Zhonglin1"is generally lower than other walnut and astringency taste lighter, Theabove shows that the differences between species have a certain relationship,"Bubble walnut" and"Zhonglin1" but also have relative smaller variation to other varieties of walnut and consistentcommodity;the walnut fat content of "XinXin2","LiaoNing1"and "LiaoHe3" is less than the fat contentof other walnut,LiaoNing1," LiaoHe3” walnut which have larger coefficient of variation. the tannincontent of "LvLing" and " LiaoHe1" compared to to other varieties which have astringency poor taste,buthave no significant differences in the protein content."LiaoHe1" and "Zhonglin1"which have higherdietary fiber content, coefficient of variation of "the LiaoHe3"is larger. the dietary fiber content of"LuGuang"and"Wen185"is lower, the coefficient of variation is larger, the commodity is lessconsistently.The coefficient of variation of the amino acid content of "Lu Guang"and"Liao He3"Wen185","JinLong1"are greater, the coefficient of variation of the protein content of "XinXin2","Wen185"and "JinLong1" is relatively large; The fat content coefficient of "Wen185""Liao He3","LiaoNing1"and"Lvling"is relatively large; The coefficient of variation of tannin content of "Zhonglin1","Wen185"and "XinXin2" is larger;"LiaoHe3","XiangLing"and"Lu Guang"dietary fiber content havelarger coefficient of variation; bubble walnuts,"Jin Long1"and "XinXin2"have larger coefficient ofvariation of the content of trace elements and its rich genetic diversity and the commodity is lessconsistently.The principal component analysis on11different regions walnuts,The results shows that the twovarieties they are "Xinxin2"and"Wen185" in Xinjiang is not take an advantage in composite indicatorassessment.But "Xinxin2"and"Wen185"occupy a certain advantage in protein,amino acids,and if wein order to gain a higher economic value that we may recommended its intensive processing research.Thecommodity rate of "Xinxin2","Wen185"performed better....
