“Hu Yu Mei” is an old Chinese sauce corporation. It’s the symbolic food ofsouth China. Its special sauce-making skill is popular among all Chinese people formore than180years. Since founding in1830,"Hu Yu Mei" broad bean paste productionprocess refletcts the influence of different age of social factors through the vicissitudesof one hundred years of histroy.This article is divided into three parts.The first part tells the history of more than180years of "Hu Yu Mei",it is divided into four stages. The first stage is from1830to1912years, this is the founding stage and the development stage in the late qing dynastyof "Hu Yu Mei". The second stage is from1912to1949years, this is the stage ofdevelopment of "Hu Yumei" during the period of the republic of China,this period had athriving,also had low tide.“Hu Yu Mei”reached its heyday in the early1930s. The thirdstage is from1949to1978years,this is the development history of “Hu Yu Mei”between the founding of new China and the reform and opening up. During this period,"Hu Yumei" thrived again and had a new development, due to the party and thegovernment also enterprised to support and protection actively on one hundredenterprises. The forth stage began from1978,this is the development history of “Hu YuMei” after the reform and opening up. During this period,“Hu Yu Mei” enjoy the fruitsof reform and opening up, developing steadily, and gradually realize mechanizationproduction.The second part introduces the history of “Hu Yu Mei” broad bean productiontechniques. Starting from the history of the sauce and bean paste, by investigating “HuYu Mei” broad bean paste with traditional craftsmanship and modern technology,compare the process of historical change. The traditional bean sauce-making skill of “Hu Yu Mei”, it is on the basis of broad bean paste production techniques, to improvethe characteristics of its spicy,44degrees and add seal cylinder wine to eliminate itssalty taste, eventually produce the tastes of broad bean sauce is suitable for the middleand lower reaches of the Yangtze river region. The modern bean sauce-making skill of“Hu Yu Mei”, it is on the basis of traditional craft, combined with modern technologyimproved, while preserving traditional natural sun dew fermentation, using modernbiology technology to analyze the composition of broad bean sauce, on some processintroduces the modern machinery to replace manual production.The third part analyzes the history of “Hu Yu Mei” broad bean paste productionfrom the theory of social shaping of technical and other theories. Traditional societyshaped the traditional hand-made paste, modern society shaped mechanical sauces. Thetechnology is affected by several things, such as economy, culture, policy and so on. Thehistory of broad bean paste production techinques of “Hu Yu Mei”,from one side reflect theinfluence of social factors in the process of technology evolution.The technology is affected by lots of things.
