Design Of Home Fruit Wine Brewing Machine And Study On Brewing Technology Of Fruit Wine

With the improvement of people's living standard,the popularity of wine and fruit wine at home and abroad has been increasing year by year,and many people have begun to try homemade fruit wine.This thesis aims at developing a small household appliance which is different from factory brewing based on home brewing.Achieve temperature control,timing automatic stirring,intelligent reminder function;To help homebrewers better control the fermentation process.In order to verify the safety of fruit wine brewing apparatus and determine whether the methanol in domestic wine and fruit wine exceeds the national standard;A series of experiments were carried out using Summer Black grapes from real estate in Jiangsu province as raw materials in order to summarize a set of brewing techniques suitable for home-brewed grapes.Through the detection of various physical and chemical indicators and the HS-SPME/GC-MS combined technology analysis and detection of the influence of six impregnation processes on the physical and chemical indicators and aroma components of summer-black wine,a method most suitable for home wine impregnation was obtained.The natural saccharomyces cerevisiae was isolated from the fresh food vineyards in Jingjiang,Jiangsu province,and the identification,culture tolerance and fermentation characteristics were analyzed.In order to realize the production of high-quality wine with fresh grape as raw material,this paper tries to use the termination fermentation technology to produce low-alcohol summer-black wine,to determine the best parameters applicable to family brewing and the effective methods of inhibiting fermentation,separating and clarifying,so as to provide strong theoretical guidance for users to produce low-alcohol home-brewed fruit wine.
