Construction Of Risk Evaluation Index System For Pork Quality Safety In Hunan Province And Its Control

Hunan province is a large pork production province, and pig breeding industry is one of the important sources of national income. The quality safety of pork is the key to the sustainable and healthy development of pig breeding industry in Hunan province. Paper with "risk identification--risk assessment--risk control "as the basic framework, using a variety of research methods that combining qualitative research and quantitative research to study risk management for quality safety of pork in Hunan province.Firstly, revealing theoretical basis for risk management for quality safety of pork in Hunan province. Livestock production theory can provide specialized knowledge and basic clue to the risk management for quality safety of pork. Risk management theory provids a basic action framework to risk management of pig breeding industry, and this framework includes three links, risk identification, risk assessment and risk control. System theory can provide methodological guidance to risk management for the quality safety of pork.Secondly, the existing problems of quality safety of pork in Hunan province were described. According to the principle of supply chain, the main problems of safety risk for pork quality were analyzed from breeding, supply of feedstuff, feed additives and veterinary drugs, pig slaughtering and processing, logistics, storage and transportation and sales. Moreover, the successful experiences of risk management for the quality safety of pork in China and abroad were introduced briefly.Thirdly, a relatively complete index system for identification and evaluation of safety risk for pork quality was constructed according to the risk types of pork quality safety in Hunan province.Finally, the basic countermeasures for controlling safety risk of pork quality in Hunan province were put forward.
