With the improvement of our national life, fresh fruit consumption is increasing year by year. Fresh fruit is a product which has strong seasonality, short product life cycle and high qualified management on transport and storage conditions. But the fresh fruit supply chain’s operation level is relatively low in our country and that leads to high retailprice, low profits so much as unsalable fresh fruits. Thus losses is taken into consideration in this paper, and the reduction of costs and the profits maximization is set as the object of optimizing the operations in fresh fruit supply chain.Firstly, the loss of fresh fruit is defined, including losses of freshness and quantities. By analyzing the production, consumption and loss of our domestic fresh fruit, three main distribution channels is summarized. Then the author try to find the leading factors that cause supply chain losses from the supply chain structure, the degree of information sharing and logistics support.Secondly, fresh fruit is divided into three categories according to its biological structure, time length and temperature in storage as well as resistance in transportation. And they are rapid deterioration fruit, medium speed deterioration fruit and slow deterioration fruit. Then supply chain optimization object is defined as:distribution channels, marketing strategy and logistics strategy.Thirdly, we analyzed the rapid deterioration fruit’s characteristics in supply chain, and proposed to use untraditional marketing methods to reduce losses and increase its supply chain profits. Thenwe establish the profits models, analysis the profit and loss of the supply chain under different levels of preservation efforts,.Fourthly, we taking the medium speed deterioration fruit as the research object and choosing the best transportation mode by constructing its minimum time model under cost constrains model in supermarket-led three-level supply chain. Then taking specific data into the time model and find out the best transportation mode, calculate the shortest time as well as the distance between supermarket and its supplier.Finally, we taking the slow deterioration fruit as the research object and choosing the best transportation mode by constructing its minimum cost model under time constrains model in supermarket-led three-level supply chain.
