With the development of modern market economy and information technology, the role ofretailers has undergone tremendous changes in the market, and gradually become the leader inthe food supply chain. Food retailers are the bond of suppliers and consumers, and they palythe bridge role during information transfer in food supply chain. They hold food demandinformation, inventory information, quality attributes information and so on. If retailershidden quality and safety information, they will result in food market information asymmetry,and cause food safety problem. Therefore, the problem of information transfer of foodretailers is the key point to ease food information asymmetry. This paper closely linked to theissues of information transfer, and made an empirical research on information transferbehavior of177food supermarket retailers using the research methods of standard, qualitativeand quantitative. Also based on combed and evaluated current food safety managementpolicies, we put forward some incentive strategies to complement food safety managementpolicies, and protect food quality and safety.This article mainly includes six parts, each part of the research content and conclusion isas follows:The first part is the introduction. The paper mainly introduces the research backgroundand meaning; research situation of food quality and safety information; research method,purpose, the technical route and main contents; the innovation and difficult points.The second part introduces type and the information structure of food retailers. Secondly,the paper summarize information transfer mode.The third part it is the status, problems and causes of food retailers pass information.The fourth part is model and research method. First of all, the paper constructs the theorymodel of food retailer information transmission, and then puts forward the hypothesis.Secondly, the article explains the design method of questionnaire investigation, sampleselection process and also makes a concrete analysis of indicators of variables. Finally, thepaper introduces the research tools and methods. Research tools are SPSS16.0and Eviews5.0softwares. Statistical methods are reliability analysis, statistical description, correlationanalysis, probit regression and logistic regression analysis. The fifth part is the empirical research of the problem on quality and safety informationtransmission of food retailers. The paper has divided information transfer into informationsearch and information sharing. The first part is the probit regression analysis on the degree ofinformation search and its influence factors of food retailers. The results showed that retailerhave higher level of information search and the search channels are diversification; thesupermarket basic features, retailers cognitive and consumer demand have significant effecton part information search method, however, exterior environment is not significant. Thesecond part is logistic regression on behavior of retailers information sharing. The resultsshowed that information sharing level of retailer is higher, and the information sharing degreeof different kind of supermarket is different; retailer cognitive, basic characteristic ofsupermarket and supply chain structure have significant influence on retailer informationsharing, and market structure is not significant.The sixth part is the incentive mechanism of food retailers. Through to combe andevaluate current food management policies, basing on the management experience of theAmerican the paper put forward some incentive measures of retailers.The seventh part is the main research conclusions.
