As the largest developing country with the most population in theworld, China that owns traditional dietary culture has maintained rapideconomic growth as well as the increasing leaving standard of citizens.Catering service has flourished in last decades as t he result of growingconsumption and higher requirements on food and drink. Up to the end of2010, the catering industry has become the important strength to expandconsumption and pull the economic growth in China.And its security isparticularly important. But comparing with the developed countries,Chinese per capita income is lower, so does the disposable income ofresidents. The basic pattern is expanding the gap between the rich and thepoor. These situations don’t get the fundamental change. It make ourcatering service level uneven.And in the rapid development of the foodindustry, the existing law and the system of regulation and supervisionobviously don’t adapt to today’s food and drink market,. It leads to manyproblems, such as lawless, regulatory responsibilities. The reasons of the oiland frequent food safety of the catering is variable and complex.This paper applies several methods that include the theory ofinformation economics and game models to research. Under the guidance ofthe theory of asymmetric information, it focuses on the topic how to ensurethe security of the food and beverage edible oil. The article analyzes theactual situation of the edible oil safety and supervision of the domestic foodand beverage companies, to explore the construction of asymmetricinformation regulatory system. First part mainly analyzes the currentdevelopment of the domestic edible oil safety in the food and beverageindustry, regulatory characteristics and existing problems, to know theregulatory loopholes of the restaurant industry under the atmosphere of theasymmetric information. And then it builds the game model to analyze manyproblems of information asymmetry in the restaurant market. There are fourkey issues to be solved, namely: the rent-seeking costs are important factorsto directly affect the edible oil safety, public and market information areclosely related. market expectations prior to consumption related to thesuccess or failure of market behavior, food and beverage companies in t he oligopolistic oil market trading practices by the consumer before the impactof the market is expected to adjust the market regulatory body subject to theregulations of the game strategy need to adjust the relevant points ofinterest. Finally, on this basis of above, it concludes three aspects to settlethe matters, to improve the cost of rent-seeking, to guide marketexpectations prior to consumption, to adjust the benefits of the gamesubjects. And in the incomplete information market, it needs to con structedible oil safety system of the catering enterprises.
