There are lots of enterprises product the surimi products, the price of the products based on it’s main ingredients(fish), but some unscrupulous traders to add little or no fish ingredients, but labeled surimi products for sale to earn a lot of money. Regulatory authorities must have effective technology platform to regulate the sales market so to protect the interests of consumers. However, there is no correlation detection technique to test the main ingredient of surimi products whatever in our country or in the foreign. The detection method proposed in this study can fill the technique’s blank to test the main ingredients of surimi products, and provide the reference to establish the test method of the other related products’main ingredients.Nowadays, real-time PCR detection technology used in food testing usually has two methods:one is the dye of Sybr GreenⅠ, the other is the method used TaqMan probes. Compared with two different real-time quantitative PCR detection methods through a large number of experiments, we choused the dye of Sybr GreenⅠquantitative PCR detection method which is cheap and suitable to this study finally to analyse the ingredient’s mass percentage of surimi products. This method is specific and sensitive, through an exogenous gene and a reference gene to establish the standard curve with standard mass percentage of surimi products, using this standard curve to calculate the main ingredient’s percentage of the sample. The method has a good linearity (R2>0.985), the recovery rate is 88.0%-107.0%, it’s detection limit is 0.05%, which are all in line with methodological requirements proved it’s feasible and accessible in laboratory conditions. Use the established method we obtain the reliable data in a laboratory environment. Considerd different surimi products on the market product in different manufacturing process, the applicability and practical application in real still needs to study.
