Winged bean is a crop abundant in nutrients, its leaves and fruit is edible, so it was widely planted in southern China as a new grain, oil. food, medicine and economic crop, the aim of the present study was to investigate the functional components and its characteristics of winged bean.The study using atomic fluorescence spectrometry.ultraviolet spectrophotometry, Atomic fluorescence spectrometry to detect selenium,vitamin E content and vitamin C content of nine strains winged bean:Hunan winged bean1, Hunan winged bean2. Hunan winged bean3, Ping Yang1, Zhong Yi1, Z4. K000021, K000026. K000032, The results shows that Vc content of Hunan winged bean series was12.5mg/100g, Ve content was128.7mg/100g, selenium content was7.5mg/100g. In the insulation under10min clearance:Hunan winged bean1was37.82%, Hunan winged bean2was40.51%, Hunan winged bean3was35.67%. Using different solvent extraction of Hunan of winged bean series, on the DPPH free radical scavenging efficiency of petroleum ether extracts<ethyl acetate extracts<acetone crude extracts<water extracts<ethanol extracts.Establishment of rat model ethanol in low selenium, taking rats supplemented with level two dose group of sodium selenite, selenium enriched yeast and winged bean selenium proteins solution, study of affection of different selenium sources on the growth and development of rats, organ coefficient, selenium content,Antioxidant activity, physiological indexes.Divide the rat into6groups randomly, each group of8, the test lasted for a period of60d. The test results show: the treatment group and blank control group rat liver coefficient were significantly different (P<0.05),the winged bean in high dose group weight of rats and the blank group were significantly different (P<0.05), the treatment group rat selenium content, SOD activity, MDA content, GSH-px activity and TrxR activity were compared with a control group with significant difference (P<0.05), in which the Sodium selenite rat tissue selenium and selenium enriched yeast and winged bean selenium proteins group were significantly different (P<0.05). winged bean in high dose group of the serum and liver SOD activity increased up to17.7%and21.2%, and the winged bean selenium and selenium enriched yeast two dose groups GSH-px and TrxR activity were associated with sodium selenite group were significantly different (P<0.05)In hyperlipidemia rats as an experimental model, the Hunan winged bean ethanol extract three dose groups gastric lavage treatment of hyperlipemia rats, and Simvastatin as the positive control group, Investigation of rat growth, SOD activity, MDA content, serum transaminase activity and lipid metabolism.The results show, it has the most obvious effect on7mg/ml Hunan winged bean extract concentration, more weight model has a certain decline, high dose of WBEE group of Perirenal fat and testicular peritubular fat relative to hyperlipidemia model group decreased by22.22%and18.28%, liver weight and reduce to12.76g. H-WBEE liver homogenate the MDA content decreased13.43%, H-WBEE alanine aminotransferase And aspartate aminotransferase were decreased by13.6%and11.7%, TG, TC, LDL-c content decreased by36.2%,23.4%,66.7%. HDL-c content increased by35.1%.The results show, the Hunan winged bean strains of Vc, Ve, selenium content and free radical scavenging rate were higher than those of other strain, using ethanol extract of Hunan of winged bean extracts on DPPH radical scavenging rate than other extraction agent. Winged bean selenium proteins group antioxidant activity than sodium selenite and selenium enriched yeast group, but with ethanol extraction of WBEE after high dose group can improve significantly.the obesity of rats and reducing blood fat, and lipid-lowering drugs effect difference.
