Winged bean named "Golden bean" that is abundants in a variety of essential nutrient.It is a multi-purpose legume as food, herbs, feed, fertilizer.Detected the nutrient of winged bean, soybean, mung beans, black beans by the conventional analysis, atomic absorption spectrometry, HPLC, etc. By adding winged bean flour into diet, investigate the effect of rats physiological indices. Measured apparent digestibility of nutrients in winged bean by enclosing algorithms. Assisting the ultrasonic method to optimized extraction, through the determination of hydroxyl radical scavenging capacity and explore its antioxidant activity. Optimizaed the extraction process of winged bean, measured the extraction capacity of cavenging hydroxyl radical. D-galactose induced mice became subacute aging as a model, were given the ethanol extract of winged bean to study the efficiency of antiaging.The results are as follows:1 Winged bean is rich in high-quality protein and lipid. In addition, winged bean is higher levels in VE, calcium, iron, zinc, manganese, and a certain amounts of flavonoids and lecithin.2 Adding 5% of winged bean flour diet can increase food intake, daily gain of rats.It is good for the growth and development in rats significantly, the liver weight, pancreas weight,and organ index of different test groups were no significant difference; Add 5% group of winged bean flour diet digestibility of all nutrients were significantly higher than other groups. Add proper amount winged bean flour could increased the digestibility of diets significantly.3 The best extracting process of flavonoids from winged beans:ethanol concentration 70%, extraction temperature 75℃, dilution 1:15, extraction time 180min, ultrasonic power 300W, the extraction rate of total flavonoids 4.70%. When the concentration of flavonoids extract 2.0mg/ml, hydroxyl radical scavenging rate of 43.74%.Winged bean flavonoids can remove hydroxyl radicals.45mg/mL Winged bean ethanol extraction could significantly anti-aging, the activity of SOD in serum increased 18.64%, MDA content decreased 61.53%; the activity of SOD in liver increased 22.39%, MDA content decreased 47.33%, the activity of MAO decreased 42.78%, LF content decreased 28.75%; the activity of MAO in brain decreased 21.19%; Hyp contents in skin increased 97.67%; LF content in heart decreased 23.06%; thymus index increased 60%.Proper ethanol extraction of winged bean have obviously antiaging effects by this process.
