Fluorine is a gas of halogen element.It is one of the necessary elements for humans and organisms. The amount of fluoride can avoid the happening of bone diseases and protect the teeth. But a lot of fluoride can cause dental fluorosis and skeletal fluorosis. In recent years, endemic fluorosis has become a prominent issue of environmental. For a long time, the accumulated fluorine of inevitably has affected the quality of water, the quality of soil and the growth of crop normal. Fluoride has respectively different distributions in the water, soil and crops, there is the relationship between them; The antioxidant enzyme system and the quality of the crop can be used as a sign of the contaminated situation. It is important to mensurate antioxidant of enzyme activity and the quality of the crops. Because both of them can prognosticate and distinguish the extent of the soil and crops by adverse environmental factors.The county of Linyi is one of the most highest fluoride ward in Shanxi Province. Because the content of local water fluoride is so high, it impact on people’s health seriously. In order to study the project of fluorine removing would be implemented and the high fluoride of water would be accumulated in the soil, and the fluoride content would increasing in the vegetables? Local residents would continue to intake fluoride by food, take impact to the heaths of them? Therefore, we have a heavy work that there are135points of the water samples, soil samples and the corresponding fluoride content of crops in total of85villages of16townships in Linyi. Also there is the studying the effect of the accumulation of fluoride, the activities of antioxidant enzyme and the quality on spinach with the irrigation by fluorine water. The main conclusions are acquired as follows:1. On the basis of the range of the project of fluorine removing and the monitoring data of fluorine content, we have fluoride content of the test in135measurement points in16towns of85villages with GPSpositioning technology. The research of fluorine content in the county of Linyi show that fluorine content is in the range of0.479~5.749mg/L. The ranking of the fluorine content of the different villages and towns descending is Yi’s>Zhuo li>Linjin>Dongzhang>Sanguan>Niudu>Meiyang>Chuhou>Miaoshang>Beiji ng>Jiaobei>Danzi>Qiji>Yanjiazhuang>Sunji>Beixin. The sample’s number of that fluorine content is greater than1mg/L is68.15%. It shows that the phenomenon of the water fluoride high content is very serious.2. The soil fluoride content’s analysis with water fluoride sampling points corresponding shows that the soil total fluoride content is in the range of63.1~550.9mg/kg, the soil water-soluble fluoride content is in the range of6.55~20.10mg/kg, the range of percentage for the water-soluble fluoride in the soil total fluoride is from1.8to12.8%, the average of them is3.9%. There is no obvious correlation among the them by the correlation analysis of the soil total fluorine, the soil water-soluble fluorine content and the soil water-soluble fluoride content.3. The corn fluoride content in the69measurement points corresponding to the soil sampling points shows that the fluorine content is in the range of0.68~3.30mg/kg. According to the partition of water fluoride content’s level, there are three areas which are the light fluorine District, the middle fluorine District and the high fluorine District. In these District, the average of fluorine concent are1.76,2.01and3.11mg/kg; Compare with the fluorine concent allowed the amount of standard1.5mg/kg in food, the corn fluorine exceeded rate in Linyi is79.7%. The dependency analysis among the corn fluorine, the water fluorine, the soil water-soluble fluorine and the soil total fluoride shows that there is no obvious correlation each other.4.The analyses of antioxidant enzymes (polyphenol oxidase, phenylalanine ammonia lyase, peroxidase and catalase) and quality (soluble sugar, Vitamin C and Chlorophyll) show that the enzymes and quality have different changes with the diffderent fluorine concentration treated.
