This research studies the Inner Mongolia white Cashmere goats’detection on meat quality. The conventional meat quality, Chemical composition, amino acids and fatty acid of ten parts of the muscle contain arm triceps, longissimus dorsi muscle, biceps femoris, quadriceps, psoas muscle, abdominal wall muscle, gluteal muscle, infraspinatus muscle, dorsi muscle of the ring-necked and chest deep muscle were determined. The results are follows:1. Conventional meat quality studies have shown that in different parts of the muscle, shear force of longissimus muscle is the minimum. It’s ability to retain moisture, tender meat. Biceps femoris of whiteness and redness value were highest, whiteness21.20; redness is17.87, the color of the biceps femoris most bright. PH value to the arm triceps and chest depth muscle is slightly higher pH value of the normal range for5.9to6.5.2. The results conventional chemical composition showed that the different parts of the muscles.to arm biceps the content of crude fat and crude protein and other parts of muscle have the significant or extremely significant difference (0.01<P<0.05or P<O.01). The different various parts of the muscle ash content in the abdominal wall muscle was highest, the water of arm biceps were higher than other parts of muscle. The higher moisture contents of the longissimus muscle, the lowest crude fiber content, indicating that the longissimus dorsi meat tender and juicy. Calcium and phosphorus in various parts muscles no significant difference.3. Muscle amino acid studies have shown that in Inner Mongolia Cashmere goat meat, the high levels of essential amino acids, lysine and histidine in the proportion of protein than in the ideal protein. Different parts of the muscle non-essential amino acids, total content39.833%to44.199%. Highest glutamate levels of the abdominal wall muscles, indicating that the delicious taste of the abdominal wall muscles. In different parts of muscle, the content of essential amino acids the quadriceps was the highest, balanced proportion. Indicating that the quadriceps nutritional value was higher, rich nutrition, regular consumption of allows the body’s immune regulatory function is enhanced.4. Muscle fatty acid studies have shown that in different parts of muscle the longissimus muscle oleic acid (C18:1) content is higher than other parts, indicating the longissimus dorsi muscle can reduce cholesterol levels in human blood. The value PUFA/SFA to the infraspinatus muscle was highest, indicating infraspinatus muscle have greater impact on cholesterol levels.
